Delete your account in 1. "Settings > iCloud" + 2. "Settings > Messages > Send & Receive" + 3. "Settings > FaceTime", but still let them using your account for iTunes and app purchases in "Settings > iTunes & App Stores". Of course, please make sure that they do not know your password to set up your account for iCloud again or purchase anything alone.

    Settings>Messages>Send & Receive...you can adjust here. There is no other setting to adjust.
    What you want to do is really not the best approach. Everyone can continue to use the same Apple ID for iTunes content, but for everything else...FaceTime, iMessage, & iCloud, everyone really needs their own Apple Id for things to function properly & as designed.

    I think I will do this.  I will use my apple ID and set face time and message to work independently.  That solves one problrem.  My other problem and maybe my bigger problem is that if I am using my apple ID, how do I iflter all of this so that my kids don't see my contacts, get my apps, etc. ?

    That's simply not possible I'm afraid. You'd need to give them their own account and allowance or make it so you are required to be there to input the password when they wish to make a purchase.

    Your Apple ID can be associated with up to 10 devices, including iOS devices, computers and Apple TV(s).  If you will still be within this limit, you can continue to share the ID across all your devices.  A caution about sharing your iCloud account, however: when you share an account any data you sync with the account is merged and the merged data appears on all devices sharing the account.  You may, for example, end up with each other's contacts and calendar events on your devices if you do this. 
    It's usually recommended that you share your iTunes account, but maintain separate iCloud accounts, as well as use different IDs for iMessage and FaceTime (to avoid getting each other's text messages and FaceTime calls).  Note: the ID you use for iTunes purchasing does not need to be the same as the ID you use for other services such as iCloud, iMessage or FaceTime.  This article may be of interest in this regard: http://www.macstories.net/stories/ios-5-icloud-tips-sharing-an-apple-id-with-you r-family/.

    Settings-icloud-scroll to the bottom, select delete, if you want to keep the content select keep, otherwise it'll remove it. Then once it is done add the account information for the account you want on that phone.  Your apple ID in settings-store will remain the same and each device can still purchase/use content from that account.

    Go to System Preferences --> Create a New User in Users & Groups
    Decide on whether to setup as Admin or Standard User.
    Switch to the New User by logging out under the Apple in the Menu Bar or use Fast User Switching
    Fast User Switching allows other users to leave current applications and windows open. Depending on RAM, you might need to log out rather than use FUS.

    Welcome to the world of digital media. Your can't really transfer it. I don't know what the rules are about transferring to your spouse but I do know that in some cases when you die, your heirs cannot inherit your digital media. This is why there is still an advantage to buying the CD since the usage rights belong to whomever holds the physical media.
    A possible workaround is to burn the songs to a music CD with yout account (tracks only without song titles) and then having your wife upload it as a regular music CD onto her account. It's been a while since i've done this so I'm not sure if it would work now.
    Please note that I'm not advocating copyright and/or TOS violations. I'm only suggesting ways to copy music for your own personal use which has traditonally been permitted. I only did this because I wanted to convert iTunes songs to mp3 files so I could burn them onto a data CD for use in my car. It would make sense that since married couples are a joint entity, this would be personal use.
    Also, I'm not a lawyer so don't take this as legal advice.

    You can create as many individual user accounts on a Mac as you like. Then, any one or more of those users can remotely log in from another Mac and use that Mac as their own, simultaneously. Each account will remain separate from all others.
    However, since each user needs to have a Mac to do that, I'm not sure how you could effectively double the number of users as you describe.

    We do this in my family now.  We have one account for purchases, so it is used to share music and apps (I think that is in Settings/iTunes & App Stores).  Each iDevice has this configured.
    Then, each of us has our own iCloud account that is configured under Settings/iCloud.  That then allows us to have our own Mail/Contacts/Calendars/Reminders/Safari Bookmarks/Notes/Passbook/Photo Stream/Documents & Data/Find My iPhone/and Backup.  That Backup piece is pretty sweet and comes in handly if you replace your iDevice.  You can just restore from it.
    So we all share the Apple Store account but we all have our own iCloud accounts to keep the rest seperate or things like you mentioned are a nightmare.

    Think of it as an internet based ("cloud") area for all of those items listed in my response.  What you need to remember is photo stream only maintans the last 1000 pictures so don't count it as a complete backup solution for your pictures.  Even though I rarely sync with a computer these days, I do still try to sync my phone with iPhoto (I have an iMac) so that I have copies of all of my pictures.  1000 may not stretch as far as it sounds.

    Create a new IDs for them:
    On the iPod go to
    - Settings>Messages>Send and receive and sign out your ID and sign into their ID. Make sure that only their ID email address is listed.
    - Settings>FaceTime sign out of your ID and sign into theirs. Make sure that under You can be reached at only their ID email address is listed
    - Settings>iCloud and sign out and sign in with theirs
    - Settings>iTunes and App Store and sign out your ID and sign into theirs.
    - Apps are locked to the account that purchased them.
    - To update apps you have to sign into the account that purchased the apps. If you have apps that need updating purchased from more than one account you have to update them one at a time until the remaining apps were purchased from one account.
