How do I update my payment card when the card needs renewing?

On your computer's iTunes you should be able to edit your payment info by going into the Store > View Account menu option and logging into your account, and on your account's details page there should be a payment link. If you are doing it on your iPad then try tapping on your id in Settings > iTunes & App Store and select 'View Apple ID' on the popup - that should also give you a payments link on your account's page.

Get a micro-SIM from the carrier in Mexico that you don't have to manually cut down. If that carrier doesn't provide one, switch to another carrier that is not so low-budget.

If they aren't showing on your account's purchase history then you should also contact your card issuer.

That Apple ID is stored inside each of those applications. If you can’t get back into it, you’ll need to delete and redownload all of them, which may require repurchasing paid ones.

To change the iCloud ID you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted to turn off Find My iPhone (if you're using iOS 7), then sign back in with the ID you wish to use. If you don't know the password for your old ID, or if it isn't accepted, go to https//appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Tap edit next to the primary email account, tap Edit, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID. Then go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). Next, go back to https//appleid.apple.com and change your primary email address and iCloud ID name back to the way it was. Now you can go to Settings>iCloud and sign in with your current iCloud ID and password.

It sounds as if you purchased the app, but you also purchased some subscription within the app. You say "Apple is charging monthly", but it's probably the app writer that is charging you monthly for some subscription you purchased within the app. Contact the app vendor and tell them you want to stop the subscription.
