Sign into iTUnes with your apple ID and you'll be able to check account details there, among them any remaining balance on any gift cards you've entered.

Any of the above will work, depending how you would like to set it up.
Given that kids tend to eventually grow up and be independent, the best long term answer for most people is to let her have her own account and her own library as soon as she can handle it. Keep in mind that content purchased from the iTunes Store is permanently tied to the account from which it was originally purchased, so separating later is a challenge.
If you want to sync multiple devices to the same library, that will work. Or if you want separate libraries (as I would recommend), they can be either on separate computers or on separate Windows user accounts on the same PC.
For the name change: Connect the device. When the name appears in the left sidebar of iTunes, highlight it and change it.

You need to punch in the passcode for any purchase right, not just for new apps??
If one of the other students, or anyone else, got access to your iTunes Store account, necessary to make any purchases, then they'd have all the information they'd need to also make in-app purchases. But an in-app purchase can only be made through the account through which the original app was purchased. Either your son bought the game (free or paid) and then shared it with someone else along with the account information (necessary to authorize the app on someone else's device), or someone else downloaded the game as well, not just made in-app purchases.
In any case, changing your iTunes Store password should now have cut off any such unauthorized activity, though of course if your son gives the new password out, you'll be back to square one.

Purchases are always deducted from the credits first. Look at the menu bar at the top for remaining credit. My credit is $23.59.

About De-authorizing Computers (contributed by user John Galt)
You can de-authorize individual computers, but only by using those computers. The only other option is to "de-authorize all" from your iTunes account.
1. Open iTunes on a computer
2. From the Store menu, select "View my Account..."
3. Sign in with your Apple ID and password.
4. Under "Computer Authorizations" select "De-authorize All".
5. Authorize each computer you still have, as you may require.
You may only do this once per year.
After you "de-authorize all" your authorized computers, re-authorize each one as required.
If you have de-authorized all computers and need to do it again, but your year has not elapsed, then contact: Apple - Support - iTunes - Contact Us.

I bought two $ 100 gift cards and both found to be redeemed although the cards were in my safe and the code was intact covered with plastic. Finally Apple put the money back into the defective cards. My question is how to find out whether the cards are good and have $ 100 value each? If I use my I phone then the amount will go to my account and I seldom use I tunes cards. The cards we bought is for our son and daughter. Secondly I bought the cards from Best Buys and both the cards were in my possession with gift wrap. How on earth the cards were redeemed?
