The exif data is stored in the photo and will always remain there unless the user removes it.
Relying on the backup of the iPhone done via iTunes to backup the photos is a start in the correct direction but is ultimately not very smart.  Keep in mind that backups can only be used for restoring to another iOS device.  Apple does not support any method of extracting specific data from the backup.
Copy the pictures off the device as would be done with any digital camera.

    Unfortunately, my absent minded son has opened up multiple accounts (4 as a matter of fact) when he has received iTunes cards, not knowing (until now) that his ipod will only take 5 accounts max. He does not sync the whole library and we have gone through his playlists to exclude his sisters' songs (which is an ordeal all on its own). I then reset his ipod and synced his playlist first, so that his four accounts and mine would be the ones which were loaded onto his ipod. This seemed to work until we included "music videos", which included some of his sisters' videos. I had assumed that they would not be loaded because the 5 accounts had been filled, but they did and the songs from his two most recent accounts were "de-synced".     You can authorize a max of 5 computers to play your iTunes purchases.

    Accounts are not registered to an iPod.
    Tp play songs in iTunes, you need to authorize teh computer. To authorize teh computer, play a purchased song. It will tell you that you need to authorize the computer by inputting your username and password.

    I've never really bothered with Party Shuffle before but it always bugged me when it gave the message about Upcoming Songs. I mean, what is an upcoming song? How does iTunes decide it's upcoming?

    Upcoming Songs are tracks in Party Shuffle that have not yet been played. You can set how many upcoming songs are visible, but this setting does not determine how many upcoming songs there are.
    Party Shuffle is like selecting Shuffle for the Library or any playlist except that you can alter the results. You can add or delete tracks and you can manually reorder the upcoming tracks in Party Shuffle. You can also tell Party Shuffle to play higher rated songs more often.
    Regular shuffle stops once every track in the playlist has been played, but Party Shuffle will continue playing, adding repeat tracks when needed.

    Doh...  I asked previously a question and cant find how to locate the inital request out the the 10's of thousands...  So i'll ask again... Sorry. 
    How does iTunes determine if your system can handle HD movies when  purchasing?  I ask because I have a highend workstation with high end Quadro 2x dual DVI card with matching high resolution monitors (Dell 3007's).  Itunes prevents me from purchasing/downloading HD movies.  If however I purchase them on my other system (mulitmedia laptop) i can play them on my workstation.  Bit of a pain to be purchasing on one system only to play on another...  Solution will be to put HD's on NAS. 
    Any suggestions?

    iTunes is aware of the serial number of each iPhone.  The backups stored in the iTunes area contain serial number information.
    You can change the name of her iPhone several ways.  One is on her iPhone in Settings > General > About > Name.
    You say "... the receiving end sees my name on their display."  That is because you are listed as the financially responsible party - the bill payer.  Her name would be seen, for example, if she calls another iPhone and the call recipient has her set up as a separate contact from you with just her telephone number.
    If you want her name to show up on her phone, in general, perhaps your cellular carrier can do that.

    It will tell you that the library exceeds the limit and will not proceed. So if you have more than the 25k limit (and keep in mind that iTunes Store purchases do not count against this limit) the only way you can use iTM is to move some music out of the library to get under the limit before signing up for the service.

    There is no downloading, moving or "transfering" required. Everything is done directly in iTunes. Time Machine will then backup everything on the internal HDD.

    No, iTunes does not burn Orange Book CDs. It only burns Red Book Standard CDs.
    What this means is that iTunes does not support CD-TEXT, or Disc At Once burning. Only Track At Once burning is supported. But the discs are "fully compatible" modern CD players.
    If you want more mastering options then macmenno is correct Jam is just about the best app on the market. The Roxio Toast with Jam package can't be beat for features and versatility.

That way, I have all my songs on both computers, so I can listen to them in either location. Obviously, each such library produces different usage data.

    But it cannot stop a new session for a user, if there is an active (in my definition apex_workspace_activity_log.seconds_ago<240) session already running for that user.
