If the headphones are the Apple EarPods, it does not work with the 3rd gen shuffle (the remote control buttons do not work).
As an alternative, you can get an adapter like this one (there are several similar products)

These and other forums are full of people with iPhone unlocking problems - the net result is that, as others have said, is:
If you bought them from Apple they will be (and stay) unlocked.
If you bought them PAYG from CPW then they will lock to the first SIM activated.
Any other contract or PAYG phone iPhone bought from the networks WILL be locked by them too.
However, all is not lost. The original purchaser can request for the phones to be unlocked by Apple, via the carrier. The carriers usually charge around £20 to do this, or gratis if you're out of contract.
You are the original purchaser, right? If not, you need to get in touch with that person and pray they'll help you out. -

Take it to an authorized service center or Apple Store in the country where the phone originated. Apple does not sell iPhones in Pakistan, nor will they ship them to Pakistan.

The Apple logo remains onscreen for several minutes with no progress bar.

Use recovery mode
Recovery mode erases your device and restores it, which should resolve the issue. If you previously synced with iTunes or iCloud, you may be able to restore from your backup after recovery.
Turn off your device. If you can't turn it off, press and hold the Sleep/Wake and Home buttons at the same time and wait a few seconds for it to turn off.
Plug the device's USB cable into your computer only.
Hold down the device's Home button as you connect the USB cable to it.
When you see the Connect to iTunes screen, release the Home button. If you don't see this screen, try steps 1 through 3 one more time.
iTunes should open and display a message such as: "iTunes has detected an iPhone in recovery mode. You must restore this iPhone before it can be used with iTunes."
Use iTunes to restore your device.
If you don't see your device in iTunes, follow these steps for Mac or these for Windows.
Additional Information
If you started your device in recovery mode by mistake, restart it to exit recovery mode. Or you can just wait—after 15 minutes the device will exit recovery mode by itself.

I bought my iphone 6 direct from Apple, however this was locked onto AT&T since the unlocked version was not available from apple at time of purchase - I asked AT&T if they had to unlock the iphone for me and they said NO since I bought the phone directly from Apple - please clarify how I can have my iphone unlocked as I would like to insert a UK card when I travel to UK and then reinsert by US card when back in america.

Only AT&T is authorized to unlock the phone but you will have to meet their requirements, generally you would need to have service with them prior to them agreeing to unlock your phone.
Return the phone if you can and see if the Apple store is selling any unlock ones.
As of right now you won't be able to use the phone unless you activate it thru AT&T. -

If you upgrade your phone you can only upgrade to iOS 7 and that is it. You can only ever update to the lastest available software, which in this case is iOS 7. You either upgrade to this or not at all because you can't upgrade to anything else. -

You can not do so. 4.2.1 is the end of the line for the 3G. You will have to access it using Safari or get a new phone.

So I guess the writer of GoPod just rewrote his program, which covered earlier iPods by the way, to remove the EU cap just to have some programming fun, because there wasn't actually a cap?
You are NOT boosting the volume of your iPod in iTunes. If you make no changes to the volume setting in iTunes, sync the song to your iPod and turn up the ipod all the way that is as loud as the iPod is going to get. The same thing applies to my non-EU ipod, with the only difference being mine will be louder as it does not have a cap. No matter what generation iPod you are using the volume level in iTunes does not give it more power so it can be louder. You can search through the threads here to see that this is true. You can search on Google. You can go to an Apple Store. You can go to a sound lab and do measurements. Take your choice.
According to the GoPod site the software works on the iPod 3G, 4G, mini, photo, nano (probably only the 1st generation), and 5G with Video. At this point Apple made it more difficult to remove it and the author gave up trying to update it. Whether he did so prior to the late-2006 is not clear. So apparently you are correct, if you had a 2nd Generation iPod (not a Nano) it apparently predated the EU Cap, but the 5th Generation definitely had the cap. If yours is still working, or if you can find one, you can use GoPod to remove the cap.
So you can either keep up the delusion that iTunes is making your iPod louder, you can find a "5.5." and try GoPod on it and let us know if it works, you can find a used 5th Generation and use GoPod, you can buy a non-EU classic, or you can do nothing.
Or you can keep posting until 10 or 20 more people give you the same answer we have and tell all of them that they are wrong. -

Windows XPMy iPod is 1st Gen works. It's running SW version 1.3.1, iTunes 7.0.2.16, etc.. I think your problem is your Nike Sport Kit is bad. Try replaceing the Nike Sport Kit.
fyi.. My iPod was purchased 4-6 months after Apple started selling/shipping the Nano.. so mine is pretty old.
