I have a gift card for $10 to make purchase on iTunes or App Store. I have the redeem code,
however, after I choose an app to purchase, it is asking for my credit card info. I do not see
where I ca enter the redeem code. Please help, thanks!

In order to redeem a giftcard you need to have an account in the country where the giftcard came from - so US giftcards are only valid with US based iTunes accounts. And in order to use a country's store you need to have a valid address in that country and be in that country when making a purchase.

There isn't a phone number for iTunes Support.
If you've forgotten your answers to your security questions then you can get them reset : If you forgot the answers to your Apple ID security questions
If you have a credit card on your account then its details have to complete - and asking for their details is also a way of checking that you have a valid billing address in that country. As long as you are buying content for yourself and not trying to gift content (you can't use your balance for gifting) then the purchase price (plus any applicable taxes) should be deducted from your balance. You need to set up an Apple ID for use with the iTunes Store before you can redeem anything in the iTunes Store. You don’t need to enter credit card information to redeem only the amount of a gift certificate or card.

I want to send gift cards for the EU iTunes store to some friends in Holland.I have not been able to figure out how, if I reside in the US, I can buy a gift card for iTunes EU. Anyone out there able to point me to the information? Or is this too impossible to do?

As noted you need to have an account in the country that the iTS is associated with. There is no EU iTS.
You cannot gift from the iTS US to the iTS UK etc. even if your friends have an account in iTS UK. They need an account in the iTS that the gift is from. Unless you have accounts in all those countries iTS then you could gift but only to the same country.
This is due to the copyright holders not allowing cross border sales.

Sorry, but as KP guessed, Apple will not exchange the card, and you are correct that you can't use a US iTunes card in Canada. You will need to give or sell it to someone in the US.

i the top right corner of the iTunes store click on your account, log in and go to billing info. Hope this helps

Any balance in your iTunes Store account from a gift card you've redeemed will be shown at the top of the iTunes Store screen when viewing from iTunes on your computer, or at the very bottom of the screen when using the iTunes or App Store apps on your iPhone, presuming of course you're signed into your iTunes Store account.
