HT3743 Once I have the "plug into iTunes" picture on my phone....

I am trying to restore my phone but it says "This device is not eligible for the requested build".
The instructions say that I must have unauthorized modificaitons and that they should be removed first.
How do I uninstall unauthorized modifications?  I can't even get into anything on my phone!!
So, what do I do now??
