Lost all my phone contacts this afternoon while my phone was charging. How do I get them back? Still have all my emails, messages, FB, Twitter, etc.. My contact list is now empty.

No. Anything that was created after your last backup will be gone.
Use iCloud to automatically backup your device, usually once every 24 hours.

You calendar info should also be mirrored on your computer. Use the option to replace all events on the iPod with the info on your computer during the next sync. You can find this option in the info pane, Advanced section.
You can also use the latest backup to restore from, it contains the calendar info as well: iTunes: About iOS backups

Thanks, but I checked iCloud and it has none of them.
If it backed up to my laptop, that died and I just got the new computer. The one that's crashed won't even boot, so there's no way to even tell if it was syncing the contacts along with all the phone photos. Literally happened at the same time - it was because I had the new computer that I was finally able to pull the photos off the phone and make room for the upgrade. It had refused to upgrade for lack of space for some time.
I had thought it was set to sync to iCloud but it vanished from BOTH my phone and the cloud. That's why I'm so angry about it.

The iPhone doesn't store any information on the SIM at all. Updating the phone should not have affected anthing on the SIM. Are you sure you're not talking about contacts stored somewhere else?
Did you try re-importing the contacts from the SIM if that's where they came from?

Why did you restore without transferring your music to your computer?
If you are in the U.S., then you can use the newly released beta version of the cloud to get your music.

All of your apps should be in iTunes on the computer, simply sync them back.
If they are not, go into the purchase history and download them again.

How do I get entries back?

If you backup your iPad, the entries may be in your backup but only the entries as of the date of the last backup will be in there. You can try restoring from a backup which will also restore everything in the backup onto the iPad. You can't just select the calandra entries to be restored.

I restored my iPhone trying to get rid of 10.53GB of OTHER hogging my phone, and I restore a back up and all my apps are gone...
Most of these apps were paid for, so I'm wondering:
1- How do I get my apps back?
Or, if I can't get them back,
2- Can I download paid for apps without paying a second time?

If for some reason you failed to transfer them to your computer (File>Devices>Trnsfer Purchases), then you would have to redownload them:
Downloading past purchases from the App Store, iBookstore, and iTunes Store
The backup that itunes performs does not include any itunes content.

I downloaded an update for my iphone, I thought I backed up my phone, but I guess I may have done it wrong because when the download was complete, all my apps, music and ALL MY CONTACTS WERE GONE!! The iphone stores nothing at all to the SIM. There were never any contacts on your SIM.
The iphone is designed to be synced to your computer regularly. You should have been sync the contacts to your computer (Outlook/Address Book) from the very beginning. If you have failed to do this, then they are very likely gone.
