Don't have software update in my general settings, why? And whatever I try my iPhone won't let me update software. Suggestions
The Settings > General > Software Update option only appears when you have iOS 5+ installed, if you have iOS 4 then you will need to do the update via your computer's iTunes.
Connect the iPad or iPhone to your computer's iTunes and copy any purchases off the device to your computer via File > Transfer Purchases. You may also want to copy photos and any important documents off the device as well e.g. via the file sharing section at the bottom of the device's apps tab when connected to iTunes, via wifi, email, dropbox etc - they should be included in the backup, but it's best to have a copy of them outside of the backup just in case. You can then force a backup of the device by right-clicking the iPad/iPhone 'Device' on the left-hand side of iTunes and selecting 'Backup'.
Then start the update by selecting the device on the left-hand side of iTunes, and on the Summary tab on the right-hand side clicking the Check For Updates button

You can only due an OTA update if your on IOS 5 or higher. If not connect your phone with itunes and itunes should read that your phone needs to be updated. suggest doing a backup of your phone prior to updating.

If you are using iOS 4 (or earlier) there is no Software Update in Settings. That feature was first added in iOS 5.
To update you will have to connect your iPhone to iTunes on a computer (preferably the one you sync with and backup to).

An iPad 2 will update to iOS 6.0.1 (which is the only version that is 'signed' by Apple), so you will lose the built-in YouTube app and the Maps app will change. -

Correct, Software Update does not appear in iOS until iOS 5. The iPhone 3G cannot be updated beyond iOS 4.2.1.
Note the iPhone 3G came out almost five years ago. -

You only have the option if you are already running iOS 5. If you are trying to update the iOS, you have to use iTunes on a computer to update the iPad.
Instructions here for all iOS versions. Make sure that you go down to the section about using iTunes. The first part of the article only applies to you if you are already running iOS 5.
