You do realize that the photo that you see in the messages app is NOT transmitted to the person that you are messaging with. You simply associate that photo with your contacts for your own purposes. That photo is for your viewing pleasure only. If you change your photo in the contacts app, the other person will not see it anyway when you message.

Select the photo by tapping on it. Tap the Edit button in the upper right corner of the Photos App and then tap on Rotate at the bottom. After you have rotated to the orientation that you want, tap Save in the upper right corner and you can save the edited photo to the camera roll.

Unless you purchased the iPhone direct from Apple in the UK and paid full price either on line or In an Apple Store then it will be locked to a UK Carrier and only that carrier can arrange unlocking
It is unlikely that the iPad is similarly locked as most are sold carrier free unless specifically purchased from a UK carrier as part of a packaged deal involving a subsidy on the price of the iPad ( not very likely but they do exist )

Find out from your son how he did it and roll it back. Without some plist manual editing or via other 3rd party tools, that graphic cannot be changed. Your easy path for fixing this is to simply ask your son in a non-confrontational way... and you will even learn something he knows and you do not. I know there's some tools out there that can do this, but I haven't done the legwork to dig them up, much less a trustworthy one. Chances are good he read something on how to hack that on the system and made the change. All you have to do is gain access to that same knowledge and presto, problem solved.
No, him saying "I don't know how it happened" is NOT an acceptable answer. He'd only give you that answer if he has a reason to be scared of you or any ramifications if he fesses up. Not trying to tell you how to parent, but if you can get that fear out of his mind, he'll tell you what he did and whatnot. Hey, maybe approach it from the standpoing of... "Hey, that's cool, didn't know it could be done even if it's hacked like that, it would be nice to change it back or put another picture on there, etc." That should defuse his fear... Make a temporary, backup copy (if you don't already have a backup copy) of the library and try the following:
1 - delete the iPhoto preference file, com.apple.iPhoto.plist, that resides in your
User/Home()/Library/ Preferences folder.
2 - delete iPhoto's cache file, Cache.db, that is located in your
User/Home()/Library/Caches/com.apple.iPhoto folder.

NOTE: If you're moved your library from its default location in your Home/Pictures folder you will have to point iPhoto to its new location when you next open iPhoto by holding down the Option key when launching iPhoto. You'll also have to reset the iPhoto's various preferences.
Damaged preference files can cause a varitety of problems which you wouldn't think it could. Deleting and regenerating the pref file is one of the basic fixes to try.

As long as you have a form of payment (credit or debit card) with a USA source, and with a billing address in the USA, then you just need to change your payment information on your account to that, change your country in the store settings, and you will then be able to shop in the USA store.
Your AppleID will work in any country's store, as long as your payment source and billing addres are also specific to that country (and you are in that country as well, as there may be IP filters in place to stop use outside of the country).

Page Setup, including page orientation, is done in the File menu. The setting applies to the whole document. As Peter says, you can rotate the contents of a page (not including the text layer of a word processing document).
As an alternative, you could use Numbers, where Sheets are empty canvases onto which you may place images, charts, tables and text boxes, and where page orientation may be set for individual Sheets. The main tradeoff is that you lose many of the built-in word processing and page layout features of Pages.
