Is it perhaps downloading the update?
Have you tried rebooting the iPad? Hold down the home and power/sleep buttons for 10 to 15 seconds or until the Apple logo appears. This should reboot the iPad. Then try the update again.
If all else fails, you can try to update through iTunes on a computer. -
I updated my ipad to iOS 6 yesterday and it worked immediately after updating my ipad worked as it should. I left and came back in about 4 hours and have a black screen. When I press the on off button nothing happens. Help.
Assuming that the battery isn't empty (and it can take up to 15 minutes of charging before it will respond), then have you tried a reset ? Press and hold both the sleep/on/off and home buttons for about 10 to 15 seconds, after which the Apple logo should appear - you won't lose any content, it's the iPad equivalent of a reboot.

If it is the third party apps crashing - try downloading another app - any free app is fine. See if that resets the other apps.

Connect to iTunes on the computer you usually Sync with and “ Check for Updates “...
If an Update Appears Install it... if not... you are up to date for your particular Device...

There is no ios7 yet! Connect your ipad to your computer, sync, then click update. You will now have the new ios6.x.x. If no computer, touch the settings button on your idevice and you should see a 1 on that. follow that for the update over wifi or network. give you self some time if doing it with the wifi

Are there apps you don't need or use? Delete them.
Is there content you've downloaded from iTunes that you can delete (as long as it's available in iTUnes, you can redownload any previously purchased content)
Do you have any large e-mails in your mailbox? Such as mails with photos.
Do you have photos that you don't want or need anymore?
Settings, general, usage can tell you how much space apps are taking up and that can help you choose what needs to go, what's part of the problem, etc. -

If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 6.1.3. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

If you are currently running an iOS lower than 5.0, connect the iPad to the computer, open iTunes. Then select the iPad under the Devices heading on the left, click on the Summary tab and then click on Check for Update.
Tip - If connected to your computer, you may need to disable your firewall and anitvirus software temporarily. Then download and install the iOS update. Be sure and backup your iPad before the iOS update. After you update an iPad (except iPad 1) to iOS 6.x, the next update can be installed via wifi (i.e., not connected to your computer).
Tip 2 - If you're updating via wifi, place your iPad close to your router to preclude getting a corrupted download.

I originally had the issue where it would not connect at all but got that fixed.
Now I am experiencing the issue when trying update the ipad ios to version 5
The process finished backing up the ipad then it says unable to connect to the backup server try again later
Any idea what I need to do now?

trying to 4.2.1 to 4.2.3 but when I go to settings, general, I dont see software update. Can anyone help?
There is no 4.2.3 and over-the-air updating was introduced with iOS 5.0.
You will need to connect your iPhone to the computer you sync with. When iTunes opens click on the name of your iPhone under DEVICES on the far left frame. Move to the Summary tab to the right and click on the Update button. -

You only needed to ask this one time. The iPhone 3G can only be upgraded to version 4.2.1 which does not have the ability to do an over-the-air update. You will never see software update in settings on that iPhone.
