You can't individually update built-in apps on the iPad, you can only update the whole iOS - if you are already on iOS 6 on it (Settings > General > About > Version) then you are up-to-date.
If you are getting a message when connecting to your computer that you need to update iTunes then it's referring to your computer's iTunes (on a Mac : iTunes > Check For Updates), not the iPad's.

    Lets see whether this file APSDaemon.exe is the problem here.
    Close your iTunes.
    Press Ctrl-Alt-Del key and choose Task Manager. In the "Processes" Tab, select the file APSDaemon.exe and click End Prosses button, then close the task manager window.
    Now open itunes and see if it is working?

    This might not help you because I don't know where you keep your iTunes, but just in case, here's what happened to  me. For months now I haven't been able to update to the latest version of iTunes. I always got an error message saying "Something went wrong and iTunes could not be updated. If the problem persists, choose Manual Update under Tools and try to install the update manually." Or something very similar. That didn't help me at all. I keep iTunes on an external hard drive  (My Passport 300 G) so I don't fill up the drive on my laptop with music. Today, I noticed that my laptop had switched this external hard drive letter to drive (I:). Previously, it had always been drive (H:). So I changed it back to drive (H:). Problem solved. iTunes updated perfectly after that.  I almost fell out of my chair.
    Just in case anyone else who uses an external drive for iTunes has this problem and  needs a little more detail, here it is: check the drive designation by clicking on Computer (or My Computer). You will see the drive letter after the name of your external hard drive. If it has changed, you can change it back by going  to Control Panel - Administrative Tools - Computer Management - Disk Management, right click on your external drive, click Change Drive Letter and Path, and change it back to whatever it used to be when you could update iTunes in the past. Please note that right clicking on the drive name in Computer and clicking on Rename will not change the drive letter designation. It will not work. You must go through Computer Management, and you must know what the original drive designation was.

    I upgraded to 7.3 iTunes - now we are getting the message "Updating iTunes library...". It gets stuck at this point. Has anyone had this issue? We've installed and re-installed several times.

    How big is your library? How long did you allow the "updating" window to appear before you cancelled/deleted/and reinstalled?
    If you have a large library--it takes awhile to update it. Albums and artists are now sorted differently--iTunes is reorganizing things. I have approx. 35,000 songs in my library--it took a long time to update (not as long as when gapless playback had to be figured, but at least 15-20 minutes.)
    I'm sure the speed of your processor and the amount of memory you have figures into this equation too.

    If you have used Software Update on your Mac or tried to update iTunes only direct from iTunes on your Mac and you are notified there isn't an update available, this means your Mac is running an OS X version that is not supported for iTunes 10.7 or later. The current OS X version is 11.0.2.

    Removing and Reinstalling iTunes, QuickTime, and other software components for Windows XP
    or                     
    Removing and reinstalling iTunes and other software components for Windows Vista, Windows 7, or Windows 8
    However, after your remove the Apple software components also remove the iCloud Control Panel via Windows Programs and Features app in the Window Control Panel. Then reinstall all the Apple software components
    - Then do the other actions of:
    iOS: Device not recognized in iTunes for Windows
    paying special attention to item #5
    - New cable and different USB port
    - Run this and see if the results help with determine the cause

    It doesn't magically transfer itself, you have to do it.  Purchase may present themselves for re-downloading but things such as CD are only on the old machine or on the CD.
    Quick answer if you use iTunes' default preferences settings: Copy the entire iTunes folder (and in doing so all its subfolders and files) intact to the other drive. Open iTunes and immediately hold down the option (alt) key (shift on Windows) so you get a prompt to select a library, then guide it to the 'iTunes Library.itl' file in the moved iTunes folder. If you put the copied iTunes folder in the default location of Macintosh HD > Users > *User Name* > Music then you don't even need to start with the option key held down, iTunes will automatically look for it there. (Make sure there isn't anything already in the iTunes folder there that you want to keep since you will be replacing it with the one you are moving.)

      Select the iTunes Store on the left side of iTunes if you have the sidebar displayed, or with the button at the top right.
      Click on Purchased on the right side under Quick Links.

    I had the same problem, I connected to a different computer that had itunes. It also was oneI never connected to before. I held the power botton and homebutton till it showed up connect to itunes. I opened up it tunes and it said my phone needed a phone software update, i folled the prompt and set it up as a new phone. Then i resored it, then put it on the computer u usually sync it on and restore it to a date the phone was working to, this helped me, if u want i can help u over the phone if u cant get it, let me know and i will send u my number over my email address, hope it works, basically i swiped the phone clean and reinstalled all software by taking these steps

    I now have a useless $700 phone.  Updated iTunes to latest version (and can't get it to revert back to an earlier version), updated iPhone (iPhone5) to iOS 7 and now it won't talk to iTunes, nor will it connect to my WiFi.  What should I try now?

    If it won't talk at all to iTunes, you can hold down the power and home button for 10 seconds, it will power off, this is ok, then let go of the power button while holding the home button until iTunes sees it as a device in recovery mode.  You can try to reinstall iOS7 and then restore.

    Maybe it was hacked before and now through the update it's locked back to the original carrier.
