If you already have iOS 5+ installed then you should have a Settings > General > Software Update option for direct update on the iPad. If you have iOS 4 then you will need to do the update via your computer's iTunes (you can also do it this way if you hae iOS 5+).
To update via your computer, connect the iPad to your computer's iTunes and copy any purchases off the iPad to your computer via File > Transfer Purchases. You may also want to copy photos and any important documents off the iPad as well e.g. via the file sharing section at the bottom of the device's apps tab when connected to iTunes, via wifi, email, dropbox etc - they should be included in the backup, but it's best to have a copy of them outside of the backup just in case. You can then force a backup of the iPad by right-clicking the iPad 'Device' on the left-hand side of iTunes and selecting 'Backup'.
Then start the update by selecting the iPad on the left-hand side of iTunes, and on the Summary tab on the right-hand side clicking the Check For Updates button

A first gen iPad should update to iOS 5.1.1 (it doesn't support iOS6). An iPad 2, 3 or 4 should get updated to iOS 6.0.1, so you will lose the built-in YouTube app and the Maps app will change.

If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 6.1. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

In order to update from an IOS earlier than 5.0, you have to hook it up to the computer you sync with to do so.
Once you have updated, you will see the software update option on your settings. But this feature was not introduced until 5.0...

How can I update an iPad to IOS 7 when the .ipsw is already in the software updates folder?

I have already upgraded one iPad to IOS7 from iTunes. The .ipsw file is still in my ~/Library/iTunes/iPad Software Updates folder. Why, when I attempt to upgrade a second iPad, does iTunes want to start downloading it yet again? It's already there. Brain damage in iTunes? I have to limit my download activity due to my ISP (can't get another one yet).

iTunes Version 10.7
OS X 10.8.1
Problem: after downloading the iOS 6.0 update on iTunes, and verifying with apple, it says preparing iPad for update.
Then it gives the following error messsage:
The iPad "iPad" could not be updated. It is not eligible for the requested build.
I have tried the instructions provided on the Apple Support website (i.e making sure you're up to date, quitting iTunes, using a different USB port, and putting iPad in DFU mode, etc. nothing works! (tried 20+ times)
Can anyone help me?

If it does not have a camera, then its a First generation iPad, and it cannot be updated past iOS 5.1.1.
If it does have a camera then it can be update to iOS 7.1.2. However, if there is no Software Update Option in Settings, you will need to connect the iPad to a computer running iTunes and update through there.

According to your profile you have an iPad with 5.1.
That is as high as the original iPad will go.
It does not support iOS 6.
