My iPhone was stolen and I can't find the photos I took with it of a certain day from last week, only from the day before and the day after. How can I retrieve them?
If they are not on your 'My Photo Stream, you only other option is try to restore an iOS device from a backup of your lost iPhone (either via iTunes or iCloud, where ever you were backing up to). Obviously you will need ot inherit and iOS device to do this.

How do I turn on My Photo Stream?
After your devices are up-to-date and you have set up your iCloud account, it’s easy to turn on My Photo Stream on any of your devices:
iOS devices: Go to Settings > iCloud > Photos (Photo Stream in iOS 6), then turn on My Photo Stream.
Mac: Go to System Preferences > iCloud, then select the checkbox for Photos (or Photo Stream). Click the Options button and verify that the My Photo Stream checkbox is selected. Open the application you want to use with Photo Stream (iPhoto or Aperture) and confirm that My Photo Stream is turned on in that application. You can also adjust your My Photo Stream settings in iPhoto or Aperture Preferences.
PC: Open the iCloud Control Panel for Windows and select the checkbox for Photos (Photo Stream in iCloud Control Panel 2.x). You can click the Options button to verify that My Photo Stream is enabled and adjust the settings. Be sure to click Apply when done.

Restore from an iCloud backup
If you have a new iOS device, or if you need to restore your iOS device to resolve an issue, follow these steps.
Follow the initial steps in the iOS Setup Assistant (select your language, and so on).
Select Restore from iCloud Backup when the assistant asks you to set up your iPhone (or other iOS device).
Select the backup you created earlier.
You can restore a backup only by using the iOS Setup Assistant.
If you've already set up your device, you can erase all current content to go through the iOS Setup Assistant again. Tap Settings > General > Reset > Erase All Content and Settings. Do this only if you already have a backup, because this step will remove all current content from your device.
Restore from an iTunes backup
If you have a new iOS device, or if you need to restore your device to resolve an issue, follow these steps:
Connect your iOS device to the computer that has your backup.
Make sure this computer has the latest version of iTunes.
Choose File > Devices > Restore from Back up.
If you're using iTunes 10.7 or earlier, right-click the device from the list and choose Restore from Backup.

Quickest place to look is in the label attached to the box the phone came in.
Not around anymore? Maybe the carrier you used the phone with can facilitate the information. Also, when under contract, the IMEI is listed in the paperwork. Apple, alas, is quite unhelpful with that information. -

If you bought it from the online Apple Store, you can go to the Apple Store (online), click "Your Account" in the upper right, sign in and retrieve your receipt from there.
