How do I make sure i actually backed up my messages on my iPhone 3G

The iPhone backup includes text messages, whether you back up to iCloud using iTunes.  The only way to verify any of the specific data in the backup, however, is to restore the backup to your phone.  You can't view the data inside the backup.

    You can turn iMessage off on your iPhone.  That's relatively easy.  Since iMessage is an Apple product/service, I have no idea how a Samsung phone will deal with an incoming one.  For that answer you should probably contact Samsung support.

    You could turn on Do Not Disturb. This would block all notifications and incoming calls.
    Or just turn you're phone's Airplane Mode on if you're not streaming the music

    You should be importing all pics taken with the iphone to your computer regularly as you would with any digital camera.  This is covered in the manual.

    I kept getting notifications every time I charged my phone telling me that I didn't have enough space in iCloud for my phone to be backed up. I deleted the camera roll from being backed up on iCloud because I was told the last 1,000 pictures would automatically be uploaded to my photo stream on iCloud. I was also told that my photo streams do not count against iCloud storage because my phone hadn't been backed up for 11 weeks. How do I make sure my picture are being backed up on my photo stream?

    Photo stream doesn't back up photos, it streams them to your other devices.  Photo stream photos only remain in iCloud for 30 days, allowing sufficient time for them to download to your devices/computers.  It is true that photo stream photos don't count against your storage.
    You also shouldn't rely on your backup to save your camera roll if you're going to delete the photos from your phone.  If you delete them, then back up again, the new backup will overwrite the backup containing the deleted photos and they will be lost.
    If you want to save your photos, import them to your computer using your usb cable as explained here: iOS: Import personal photos and videos from iOS devices to your computer.

    Is there anyway of checking they are in itunes before I restore?
    I've never used the contacts part of sync process as I wasn't sure if it would store the contacts I have on my phone on my computer or vice versa (which would be crap as I don't really use outlook etc for contact storage)
    Any suggestions?

    If you're both using Muse then it's no different than if you were both using PS, AI, Word, etc. You need to use a mechanism to enable you to both have access to the latest version of the .muse file (i.e. Creative Cloud Files folder, Dropbox, file server location, etc.).
    Changes made in the browser will sync back to the .muse file. Changes made in Muse are saved in the .muse file and if you're going to work on the site in Muse on two different machines then you need to have the up-to-date .muse file on the other machine.

    That is everything in your iCloud account.  Videos and camera roll photos are only included in your backup, the size and content of which you can see on your phone in Settings>iCloud>Storage & Backup>Manage Storage>tap the name of your device under Backup.  This will show you the size of "Camera Roll", where these are contained.  (You can't see any detail beyond that.)  Photo stream photos can only been seen in your photo stream album on your phone, and they don't count against your storage so they aren't part of the 4.5 GB.  Everything esle is either in the backup, the items listed in Settings>iCloud>Storage & Backup>Manage Storage, or on icloud.com, where you can see your contacts, calendars, etc.

    I checked and it is checked to play sounds for mail actions.  So I unchecked it, then rechecked it.  Still no go.  Funny thing is it works just fine on the iPad

    We have an application using the SCXI 1324 module. When the module losses power the relays keep their state. The control program attempts to set all the relays off when it starts up, but the 1324 assumes the relays are off when it powers up and the CVI call to turn the relay off does nothing until I cycle the relay on and back off again.

    OK, the 1324 is a terminal block. The relays in question are in the SCXI-1160 module.

    Thanks for clarifying that you are using Time Machine and iPhoto in regard to your questions.
    There are a number of other applications that will back up your Mac to the Time Capsule.....Carbon Copy Cloner, SuperDuper and Chronosync to name just a few. That is why we were asking for more information.
    As far as Time Machine and iPhoto are concerned, it is unfortunate that a few years ago,  Apple removed the feature which would allow you to "browse" the images in your Time Machine backups in the iPhoto Library. If you want to restore any images from your Time Machine backups, you must restore the entire iPhoto Library then use iPhoto to view the images that you want.
    You can get a good idea of whether your iPhoto Library backups are good by comparing the size of the iPhoto Library in your Pictures folder to the size of the iPhoto Library in your Time Machine backups.  If the size is the same, then you know that everything is being backed up by Time Machine.
    To do this, click the "smiley face" Finder icon at the lower left of the Mac's screen on the dock
    Open the Pictures folder
    Click once on the iPhoto Library to highlight it
    Click the "gear" icon at the top of the window
    Click Get Info
    Note the size of the iPhoto Library
    Now open Time Machine and choose a date from the past from the timeline on the right side of the screen.
    Navigate to the iPhoto Library in the Pictures folder
    Double click the iPhoto Library and note the size of the library
    If the library is being backed up, the size of the library on your Mac and in the Time Machine backups will be the same.

    In a browser (and unfortunately Safari on iOS - your iPad won't work) go to www.icloud.com and login in using your appleID. You should see an icon for Notes (yellow pad like you have on the iPad). Click on that and any notes you have on the iPad should appear there.
    When you are in Notes on the iPad creating a note, tap the Account button (upper left) and select iCloud to store the note in iCloud (if you are using additional account, such as Gmail, it will show up as well). A note, for syncing purposes, can only be synched to one account. If youare in the All Notes view adn create a note, it should store it in whichever youhave selected as the default (Settings app > Notes > Default Account). Sounds like Comcast, in your case.
    For backup purposes, you should be set, I think, already.

    Thanks for the reply.  I think I figured out the problem.  Apple has confused (at least in my mind) the different IDs that people can have.  In the iCloud settings, they use the term Apple ID and not iCloud ID.  I guess there really is no such thing as an iCloud ID.  There are Apple IDs with various attributes.  This is not clearly explained or easy to see (how could I look up to see if my Apple ID is associated with iTunes for example?).
    I created, what I thought were iCloud IDs for each family member, but we all use my Apple ID for iTunes.
    One other question - why does the syncing of Notes using iCloud require an @me.com email account.  That makes no sense to me.

    Settings>General>Network>Roaming>Data Roaming>Off. If you really want to be absolutely certain, Settings>General>Network>Cellular Data>Off.
