If you backed up to iCloud, your these photos can only be accessed by restoring the backup to another iOS device.
Music isn't included in the backup; it should be in your iTunes library. Music purchased from iTunes can be redownloaded again for free (http://support.apple.com/kb/HT2519), but music from other sources, if not in your iTunes library, cannot be recovered.

Make sure the contacts you are adding are added to your 'iCloud' group and not an 'On My Mac', 'On My Phone' or other non iCloud group (you can do this by checking in groups), non iCloud contacts will not sync.

You can't merge the backups, you'll have to delete the backup of your old phone. If it says it's currently in use when you try, that will normally clear up on its own but may take 3-5 days to do so. Give it a few days and try deleting the old backup again.
In the meantime, you can create a manual backup of your new phone on your computer by connecting it to your computer, opening iTunes, clicking on the name of your phone in iTuens, going to the Summary tab of your iTunes sync settings and clicking Back Up Now. Also go to File>Devices>Transfer Purchases. Then you'll be safe until you can start backup up to iCloud again.

If your device backs up to iCloud, and that would happen every day assuming "conditions" are right, then you probably only have the latest backup available for a restore. You won't have one taken October 3 available.
I say "latest backup available" because, although Apple mentions up to 3 backups are available for restore, most users report having only one when they try performing a restore. Certainly expecting going back 5 days would be outside the limits.

You can't delete individual photos currently I'm afraid (except from a single device), you can delete all of them or none of them.
To delete all of them, reset Photo Stream, (iCloud.com > account (click on your name in the top right corner) > advanced) and then turn off Photo Stream syncing on each device and turn it back on again (settings (system preferences) > iCloud).
