Can I update my iPad to IOS5?

Any iPad can be updated to iOS 5. You need to use a computer and iTunes - the latest version of iTunes is advised.
What you should do anytime that you update the device is to transfer purchases from the iPad into iTunes - File>Transfer Purchases - and you should backup the iPad as well. When you update the update the device, if something goes wrong, you can restore from the backup.
However, iTunes should ask if you want to backup before you update, but just in case create the backup yourself before you update. The backup contains your app data and settings - along with other items - so make sure you backup first.
If you have any other important files, you may want to transfer them to your computer as well, prior to the update.

    I recently had my nephew update my IPad to IOS5, when I put my pages application back my saved document were gone. It as if I am just starting a new pages.
    What can I do to recover the document that was on Pages before the update?

    I don't think you're on iOS 5, I think you're using iOS 6.  That's the latest version.
    Unless you've used iCloud to back up your documents, you won't be able to restore them.  And for future reference, you don't have to uninstall Pages to update your iPad anymore.  Sorry about this.

    My wife just updated her iPad to ios5 because of problems with Safari. Now she cannot see her previous web pages as she could in ios4. Instead she sees tabbed browsing which she hates. Can tabbed browsing be turned off and Safari restored to the way it used to work? Are there any alternatives/

    You can't turn it off. Sorry. Take a look at iCab Mobile. It's another browser that's available in the App Store. It has both tabs and thumbnails (and tons of other neat features).

    You can only update a device to the highest iOS version that it supports, which for an iPad 2 is 7.0.4
    What happens when you follow the instructions on the page that you posted from ?
    To update, connect the iPad to your computer's iTunes and copy any purchases off the iPad to your computer via File > Devices > Transfer Purchases. You may also want to copy photos and any important documents off the iPad as well e.g. via the file sharing section at the bottom of the device's apps tab when connected to iTunes, via wifi, email, dropbox etc - they should be included in the backup, but it's best to have a copy of them outside of the backup just in case. You can then force a backup of the iPad via File > Devices > Back Up.
    Then start the update by selecting the iPad on the left-hand sidebar, and on the Summary tab on the right-hand side clicking the Check For Updates button

    If you have an iPad 1G you cannot run iOS 7. If you are currently using iOS 4.x.x then you cannot upgrade OTA. Instead do this:

    Download Apple – iTunes 11.1. Connect your device to your computer and open iTunes. Select your device under the Devices heading in the iTunes' sidebar. Click on the Summary tab in iTunes' main window. Click on the Update button.

    You only have the option if you are already running iOS 5. If you are trying to update the iOS, you have to use iTunes on a computer to update the iPad.
