What error message do you get ? If you are getting a network timeout when downloading the update on your computer then try temporarily turning off all your firewall and antivirus software until the download has completed. If it's a different error message ... ?

Try this - Reset the iPad by holding down on the Sleep and Home buttons at the same time for about 10-15 seconds until the Apple Logo appears - ignore the red slider - let go of the buttons. Turn off the check mark to sync your music and also the check mark for the video. Sync the device. This will remove the items from you iPad but still keep them on your computer. Install IOS 7.1.2. Then turn on the check marks for your music and videos and resync the device.

I had the same problem. In the end I downloaded it manually. Here's the steps assuming you are on a Mac and have an iPad Air (Wifi). If not you can find other restore links here.
In the terminal (it kept failing to download in Safari):
curl http://appldnld.apple.com/iOS7.1/031-4521.20140310.D2Ydl/iPad4,1_7.1_11D167_Rest ore.ipsw >>~/Desktop/iPad4,1_7.1_11D167_Restore.ipsw
Once the file has downloaded, move it to ~/Library/iTunes/iPad Software Updates/
Quit and relaunch iTunes.
Should now work for you.

Trying to update my iPad 2 to iOS 5 but it keeps failing.

I have been trying to update my iPad 2 to iOS 5 but it keeps coming up with "The iPad could not be restored. An unknow error occurred (-1)". I've been trying since Thursday but still no joy. I've tried doing it through two different PCs as well. My iPad just tells me that it needs to connect to iTunes. I updated my iPhone software with out any issues.
I went into my local iStore but they wanted £12.00 just to restore it. I was advised that they would do it for free in an Apple Store so I'm guessing that I'll have to pop into one in London during the week.
Is anyone else having these problems / been able to resolve it?

Boy sure what you are doing but the current iOS level is 7.1 not 7.0.4.
You cannot update to 7.0.4.

FORCE IPAD INTO RECOVERY MODE
1. Turn off iPad
2. Turn on computer and launch iTunes (make sure you have the latest version of iTune)
3. Plug USB cable into computer's USB port
4. Hold Home button down and plug the other end of cable into docking port. Do not release button until you see picture of iTunes and plug (very important)
5. Release Home button.
ON COMPUTER
6. iTunes has detected iPad in recovery mode. You must restore this iPad before it can be used with iTunes.
7. Select "Restore iPad"...
Note: Data will be lost
