I found the following steps to take if you need to deactivate iMessage:
iMessage is registered with your cellular telephone number when you turn it on with your iPhone. If you want to deregister your phone number:
Tap Settings > Messages and turn iMessage off
If you still cannot deactivate iMessage after you perform the steps above, or if you no longer have access to the iPhone, please contact Apple support for assistance.

    If youv'e ever called them they should have it on file. If you haven't call your carrier first and tell them that you need imessage turned off but don't have the imei number for the old iphone and ask if they still have it. Once you get it you can call apple and give them that number or have your carrier just route you straight to them.

    You can't as such. If you have a credit card entered that you wish to remove, just go into the account settings through iTunes and choose "none" for the Payment Method:

    Yesterday I bought a new galaxy s5 as a replacement for so iphone 4.  I did not turn off iMessage before I activated the new phone and sent in the old one.  Now I can't receive any text messages from people with iphones.  This is more than half of my contacts.  I also can't even contact apple because to do so I have to have the serial number of my old phone.  What am I supposed to do?

    Your question topic says you have all your photos backed up in iTunes. If so they are on your computer. When you get your new phone you can sync those photos from your computer to your phone.

    Not sure what you mean by turning it off 'online'? The only way to deactive iMessage is to go to Settings > Messages > and turn off iMessage there. If you have multiple iOS devices that are linked to your Apple ID that you use to send iMessages from (iPhone, iPod Touch, iPad, Mac), you'll have to individually turn off iMessage on each device, otherwise when someone sends you a message from another iMessage capable device, it'll just go to one of the other devices.

    Try holding the MENU and SELECT (center) buttons until you see the Apple logo to reset it.
    Then see if it will turn off.

    I also have had iPhone's for many years and when you plug your phone into your computer and iTunes comes up on the main page toward the bottom where your you back up your Iphone there is an encryption that you set up with a password.
    Maybe you never set up this encryption before, but it is there. 
    I am using another program to transfer my music and it tells me that it can not do it because I need to turn off the encryption in iTunes, this only comes up when an iPhone is connected and since I no longer have my iPhone then the option is not there.

    You need an iPhone, iPad, iPod touch, Mac or PC to downgrade the iCloud storage. The only thing you can do is to contact with iCloud support and tell them to downgrade your iCloud storage > http://www.apple.com/support/icloud/contact

    Thank you for the question.  You can downgrade your storage for the next plan year by accessing your iCloud account on a computer or from an iOS device.
    Use these steps:
    If you want to reduce the cost of your iCloud storage, you can request a downgrade (you'll have less space available). The downgrade takes effect one year after your storage upgrade was initially purchased.
    On your iOS device
    Go to Settings > iCloud > Storage & Backup, then tap Change Storage Plan.
    Tap Downgrade Options, then choose the storage plan you’d like to have when the next annual payment is due.
    On your Mac
    Open iCloud preferences, then click Manage.
    Click Change Storage Plan (in the upper right).
    Click Downgrade Options, then choose the storage plan you’d like to have when the next annual payment is due.
    On your Windows computer
    Open the iCloud Control Panel, then click Manage.
    Click Change Storage Plan, then click Downgrade Options.
    Select the storage plan you’d like to have when the next annual payment is due.
