I have an Itunes card - don't know if it's been used yet. How can I tell??
And I have another one - unused - can I just load it onto my account - on any computer - using my Apple ID and then buy things from Ipods counting on the fact that it will recognize I have credit to use?
The balance is not held on the card. Credit is held in your iTunes Store account on Apple's servers. Once redeemed, the card itself is then worthless. The balance will be shown next your user name when viewing the iTunes Store through iTunes on your computer, or at the bottom of the Featured screen in the iTunes or App Store apps on an iOS device, presuming of course you're logged into the applicable account.

Once you redeem the card, there is no value left on it. The Redeem process puts the full amount as a credit balance into your account, and then you spend it down by using your account.
As Gnome notes, you can always see how much is credit balance is on your account. -

You can't transfer gift card credits from one account to another. You'll have to sign in using the old account on your iPhone to use the credit balance. =)

I have a few iTunes gift cards and I would like to know how much each one of them has. I've tried redeeming it but it just tells me that that card has already been redeemed. I'm pretty sure they still have a bit of money left on them and I would just like to know how much each one of them has.
If the cards have been redeemed then their remaining amount should be on your account, the cards are now effectively zero. My account's balance shows at the top left of the store's page on my computer's iTunes, and by logging in to view my account via the Store > View Account menu option. On my devices it shows at the bottom of, for example, the Featured tab in the App Store app under my account id (or you can view your account via Settings > iTunes & App Stores and it should show on the screen that you are taken to). You may not see anything if your account's balance is zero.

I want to know pease, why my visa is being charged for in game purchases,even though I have plenty of money left on an iTunes / apps gift card?
For what it's worth, you posted this in 2011, and here in 2014 I am still having this same issue. Over the last two days, I have had to unlock my apple account 8 times. I didn't get any new devices. I haven't initiated a password reset. I didn't forget my password. I set up two factor authentication and have been able to do the unlocking with the key and using a code sent to one of my devices.
That all works.
It's this having to unlock my account every time I go to use any of my devices. And I have many: iMac, iPad, iPad2, iPad mini, iPhone 5s, iPod touch (daughter), and my old iPhone 4 being used as an ipod touch now. They are all synced, and all was working just fine.
I have initiated an incident with Apple (again) but I know they are just going to suggest I change my Apple ID. It's a simple one, and one that I am sure others think is theirs. I don't want to change it. I shouldn't have to. Apple should be able to tell me who is trying to use it, or at least from where.
