You'll have to use iTunes on your computer to get your iPhone to the latest version of iOS. From there you'll be able to update directly from the iPhone for future releases.

Your email address (used as your Apple ID) does not matter, because iPods are not directly linked to a particular Apple ID.
NOTE: You can still use your old Apple ID, even if your that email address is no longer valid. As long as you remember your Apple ID password. Go here and click on Manage your Apple ID.

You can change the primary email address used by Apple, although the Apple ID remains the same.
Back to the iPod. iTunes syncing is generally in one direction only, from the computer's iTunes library to the iPod. You cannot use iTunes to transfer song files from iPod to computer, except for songs purchased from the iTunes Store. However, there are third-party methods and utilities that can transfer from iPod to computer. If you do an Internet search on something like "ipod transfer," you should get some links. Once the song files are on your computer's drive, you can add them to your new iTunes library. After confirming everything is there, sync your iPod to that library. If you have an iCloud account you might want to consider syncing that way so you won't have to use cables but that is certainly up to you.
Try:
1.) Backup all your data:
Backup your iOS device: http://support.apple.com/kb/HT1414
Backup your computer Addressbook: http://docs.info.apple.com/article.html?path=AddressBook/4.0/en/ad961.html
Backup iCal: Click on each calendar on the left hand side of iCal one at a time highlighting it's name and then going to File Export > Export and saving the resulting calendar file to a logical location for safekeeping.
2.) Reset the computer's sync services and then restart the computer: http://support.apple.com/kb/TS1627
3.) Plug in the iOS device and attempt a sync.
--- Check the Info tab in iTunes to make sure calendars are still set to sync.
If that does not resolve the issue let me know and I'll give you a different route.

And what exactly is your problem? Other than going of on a tangent about Adobe's alleged evilness preventing you to activate whatever CS3 product, you have not provided any useful info such as what exact problem you have, what system, what product we are axctualyl talking about and so on.

If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 6.0.1. For the iPad Mini the iOS is 6.0.2. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

You cannot. Copy everything you want form the old computer to the new one, then sync it.

Correct Iphone will sync, or manually manage, with one and only one computer/library at a time. Syncing, or manually managing, to another will indeed erase the current content.

Last night I wiped the phone and did a complete restore. Lo and behold the wifi was working again after the restore finished. GREAT. 30 minutes later went to look at the phone and no wifi again, great!
So if my wifi chip coincidentally fried itself during the update, I supposed it coincidentally unfried itself during the restore, only to fry itself again later. Clever chips these.
