Having recently bought an i Mac we want to stream the computer trough the Apple Tv a television. Airplay is on and does not offer the link back to the computer.

If you're talking about music and movies an i-device was not designed for unique storage of media. It is not a backup device and media transfer was planned with you maintaining a master copy of your media on a computer which is itself properly backed up against loss. Syncing music and movies is one way, computer to device, updating the device content to the content on the computer, not updating or restoring content on a computer. The exception is iTunes Store purchases which can be transferred from a device to a computer.

On the computer in iTunes log into her Apple ID and then see if recent purchases are shown by clicking on her name in iTunes, entering her password and then selecting the option. If there is nothing there then she bought that music with a different Apple ID.
You can use TouchCopy to move all the songs on the iPod to the computer. Then try to play one of the purchase songs and it should show the account used to purchase it and ask for the password.

Restore the iPod in iTunes for Mac. Restoring will erase and reformat the iPod's hard drive, reload the software with the Mac version and put it back to default settings. Once the restore is complete follow the on screen instructions to name the iPod and automatically sync your songs and videos onto the fresh installation. Press Done and the iPod will appear in iTunes and start to sync. Music is intended to go one way: from your computer to the iPod. Going the other way is contrary to the design and is not trivial.
If you had a Mac and its hard disk failed, you would use Time Machine to restore its contents to a replacement disk. A disk failure would be a non-event. If you replaced your Windows computer with another Windows computer another failure is just a matter of time.

For everything else (music from CDs, other downloads etc) there are a number of third party utilities that you can use to retrieve the music files and playlists from your iPod. The ipad is not a storage/backup device. The sync is one way - computer to ipad. The exception is itunes purchases: File>Devices>Transfer Purchases
It has always been very basic to always maintain a backup copy of your computer for this very occasion. Use your backup copy of your computer to put everything back

If your Mac meets the specifications for airplay mirroring, then you can play your DVDs but you will have to use a program such as VLC.
AirPlay Mirroring requires a second-generation Apple TV or later, OS X 10.8 or better and is supported on the following Mac models: iMac (Mid 2011 or newer), Mac mini (Mid 2011 or newer), MacBook Air (Mid 2011 or newer), and MacBook Pro (Early 2011 or newer).

Hold down the Option key while you boot your Mac. Then, it should show you a selection of devices. Click your flash drive and it will boot from that.
