I want to make my icloud account have the same apple id as my itunes account. My son created it under his email and I don't see an option to change it to mine. Whe I go into setting icloud, I am not able to select his email to change it.

Settings > iCloud > Delete Account. You are then given the option to keep contacts etc. Sign in with the Apple ID you want to use. Sign out of iCloud on your computer if you have it.

If the old ID is an earlier version of your current ID, temporarily recreate the old ID by going to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone, even though it prompts you for the password for your old account ID. Then save any photo stream photos that you wish to keep to your camera roll. When finished go to Settings>iCloud, tap Delete Account and choose Delete from My iPhone when prompted (your iCloud data will still be in iCloud). Next, go back to https://appleid.apple.com and change your primary email address and iCloud ID name back to the way it was. Now you can go to Settings>iCloud and sign in with your current iCloud ID and password.

If you were a migratee from MobileMe then you would have an @me.com and an @icloud.com address with the same text before the '@' - they are effectively the same address and you can't change either.
However you can add up to three 'email aliases' - these are additional addresses (not accounts) which deliver into the same inbox as the main account. (In fact it's a good idea to give out alias addresses, rather than the main address, because if they attract spam you can easily change them.) (New aliases can only be @icloud.com ones; @me.com addresses cannot now be created.)
You should be aware before you start that once you've created an alias you cannot turn that address into a full iCloud account or move it to another account.

Firstly, you need to change your details with Apple, Start here, change your country if necessary and go to manage your account. You may have already done this.
In order to change your Apple ID or password for your iCloud account on your iOS device, you need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")
Providing you are simply updating your existing details and not changing to another account, when you delete your account, all the data that is synced with iCloud will also be deleted from the device (but not from iCloud), but will be synced back to your device when you login again.

If you know the answers to your security questions, you should be able to change your password without using email authentication (see http://support.apple.com/kb/HE36). If you don't, you may be out of luck.

When you delete the account from your device, you will be given the opportunity to save Safari data, reminders, calendars and contacts to your device, which you can later merge with the other account once you login.
You won't be able to save your photo stream photos in the same way, so if you have any photo stream photos that are not already in your camera roll, you should move them there before you delete your account.
Your iWork documents can be saved to iTunes on your device, but if you have them on a Mac they would be much easier to save to your desktop there. You can move them back after you switch.
Notes can be shared to messages or mail and copy and pasted back after the switch. Although if you have a Mac, you may find it easier to do there. You could also use a temporary secondary account (see last item) to log into both accounts and copy and paste directly into your other account.
You can set up Mail forwarding at iCloud.com mail preferences (little gear icon-bottom left) to receive mail from your old address to your new one.
As an alternative to just switching, you might consider switching and adding your previous account back as a secondary account at settings > mail, contacts, calendars. You would still need to move your photos and iWork documents and save your safari data, but you'd have access to your old mail, contacts, calendars, reminders and notes.

You may be able to change or reset the password on this old iCloud/Apple ID account, even if you no longer have access to the email address associated with it. Once the password is changed/updated, you should be able to log your iPhone out of the old iCloud/Apple ID account and log in to the correct new account. Your iCloud account ID and password are the AppleID and password you used when you created the account. As fromsouth says, change the password for the AppleID and you've changed it for your iCloud login. You can also change the primary email address of that AppleID if you need to.
