    For photos taken with the iPhone or saved from emails/websites then you should be able to use the Windows camera wizard or just copy them via windows explorer : photos to PC.
    For photos that were originally synced from a computer you will need a third-party app such as Simple Transfer which can copy them off via your wifi network. But as photos are 'optimised' when they are synced to the iPhone, any that you then copy back to a computer may not be exactly the same as they originally were on your computer.

    I thought it would start doing right away ... but has not.   What needs to be turned on?

    You need to be running either Lion or Mountain Lion on the computer. Not sure which iOS you need on the iPhone, but if it has iCloud in the settings, then it's OK. Enable photostream in the iCloud preferences on both devices. On the computer, open iPhoto and go to iPhoto preferences. Select the photostream tab and enable photostream in it. You can also select automatic uploads and downloads there. Once enabled, you have 30 days after taking pictures on the iphone to open up iPhoto. When you open iPhoto, it will automatically import the pictures from photostream to iPhoto if you have that enabled, or you will have to do it manually if you don't.
    Also, any photos new photos you put on the Mac from other sources can or will be uploaded to photostream which can be viewed on the iPhone.

    Make sure Notes is enabled in iCloud on both devices.
    Settings->iCloud->Notes.
    Under Settings->Notes... make sure your default account is the same on both: iCloud, Gmail, etc.
    If they are not syncing, try turning them both off then on again.  It can sometimes take a few minutes for them to sync.

    In a finder window, under 'shared' you should be able to see the windows computer name, click on it and connect to it. I am assuming here you have sharing turned on and permissions granted on the windows computer.
    Will add a note though, I have frequently accessed files from a PC on the LAN using XP, not vista.

    No, you're missing the entire forest and the trees.  Whatever it is you are trying to accomplish by hacking iBooks off of your system, it is not an informed decision that will benefit you in any way.  To increase rather than decrease the load on iTunes by returning the book library view to it would tend to make iTunes worse, wouldn't it?  Certainly, not being able to open your books there in any way can't be an improvement.  If you have books that used to show up in iTunes, and that is where you want them displayed, then you have books that will be read on iBooks on iOS or OS X.  If you're just shifting ePubs into some other reader on your mobile devices, you wouldn't put them into your iTunes library at all, and iBooks would be empty anyway. 
    And beside that, you're hosed in Yosemite with those maneuvers, so again, accomplishing absolutely nothing but scratching a very silly itch that is much worse as the rash you're creating.  Did you delete the unnecessary keyboards and language files first, because that will save a lot more space.  Did you cull the unnecessary kexts for your hardware?  You know, things that actually do something valuable with a measurable benefit and no downside.  If iBooks is such a pressure on your life that you have to get rid of it, how would you know?  Do you torture yourself by opening iBooks everyday and then screaming in pain?  If you can live without it installed, then you would not normally be opening it anyway, so it would have about the same affect on you as Migration Assistant or Chess, unless you deliberately sought it out.

    Close iTunes.  It has no ability to sync a non-Apple phone.
    Then look in your iTunes Media folder to see the song files, and handle them in accordance with the instructions that came with your phone.

    You would have to be physically located in Spain, have a Spanish credit card with a valid billing address in Spain.  The you could set up an account in Spain and use it when you were physically located in Spain.
