I accidentally chose to treat a new iphone in my itunes as 'new'. I now want to restore a backed up version of my old device. How do I do this?

When I first plugged my new iphone into itunes and tried restoring from my old device it said I couldn't becauas my old device's software was too old. I then updates my old device. I plugged in my new phone and accidently chose to treat it as 'new' as apposed to restore up from old device. I do I now restore all my apps and what not from my old phone?

Aa long as your Backup file is still the Backup from your earlier iPhone you will have no problem in Restoring your iPhone from that earlier Backup.  There are many reasons that owners would choose to Restore to Factory Settings (as New) and then go back and Restore their Backup content.  If you connect your iPhone to iTunes use the iTunes pulldown menus at the top left of the iTunes Screen looking for your Device and then the available Backup Files will show and you can select the one that relates to the date of the Backup you want.
You will NOT need to Erase any content to do this.
On my iTunes on my Mac it is under File>Devices>Backup
