On a new computer you would install the current version of Adobe Reader (XI), though in many cases it'll be installed already. Nobody should be using an out-of-date version of Adobe Reader, it's a massive security risk.
Acrobat can possibly be installed from your original media, but it depends on how old it is. Version 5 for example will not cope with modern operating systems, and the activation systems for old versions of Adobe software get shut down after a while.

You are allowed to have two machines with activated installations, so if you only had one installation, you still have the option to install on a second without doing anything further than that. If you originally downloaded the purchase thru Adobe then you might find a download link available in your Adobe account online. You can also download thru the following page if you can find your version:

For photos synced from your computer ( photo library pics) you don't. The photo sync is one way - computer to ipod.
You need to move the pics from your old computer or your backup copy of the old computer. You could e-mail them to yourself. They will not be of the original resolution.
For pics taken with ipod ( Camera Roll Pics), then you import them as you would from any digital camera.

Backup to what? If you have the old computer and don't have a backup then I suggest doing so, not just for this situation but it's a good idea in general to have important data backed up.
