I am unable to change my Apple ID

I went to the support area and tried to change my Apple ID, when I tried to enter a new name I didn't get an edit choice all I got was a blue Cancel where the edit area was. I am not able to add apps as my Apple ID or password is incorrect.. The iPad is not taking the changes. My wife got a new user ID for herself but the iPad didn't take it.. what do I do next ??

If you want to download apps, even free ones, you need a credit card on file since you already created your Apple ID. You can create a credit card free ID in iTunes, but you'll need to create a new account. Honestly though, I've had a credit card on file in the store for about 4 years now. Not once have I been charges for something I didn't purchase. It is nice to have the option to be able to download an app that is paid, or buy a song, or purchase a book in iBooks, etc.

Apple IDs never go away, so it still exists.
But lets be clear. You actually stopped using an Apple ID and created a NEW Apple ID. You didn't just change the email address of your Apple ID? That means that all of the music and apps purchased with the old Apple ID will have to be purchased again.
If you really did create a new Apple ID you will need the password associated with the old one to disable Activation Lock. There is no way around this. As I said, the old one still exists. You can use the standard tools to recover the password at https://appleid.apple.com.

You got it - precisely what I meant. When you kid created her id she was assigned icloud.com e-mail as secondary e-mail to her Google account (her primary user name). Icloud server would not "allow" her to change that secondary. In your case - when you created account - you didn't provide e-mail address, so your icloud.com became your primary. For intents of that, your original email is what makes icloud servers to recognize you for all the services(specifically mail servers), therefore can't be changed. You can create new account with your gmail. You can change that gmail on new account to anything you want(with few exceptions) later, but the address that icloud would assign to your new gmail account (icloud.com) will stay with forever. (unless apple changes something).

Apple may not let you change your Apple ID since you are using your other email as a rescue still. You will first need to goto id.apple.com and login. Then you need to goto security and passwords, where you rescue is kept, and remove your rescue email address. Once it is removed, you should be able to change the email you do not have access to to the one you were using as a rescue.
Just make sure you don't lose access to that one too.

Does the updated version of your account show in Settings > iTunes & App Stores on the iPad ? If not then try logging out of the account by tapping on that id and then log back in and see if that 'refreshes' the account on the iPad.

Depends on what you want to change the ID for. To change the ID...
To change the ID:
For iMessage, go to Settings>Messages>Send & Receive, tap the ID sign out, sign back in using the other ID.
For FaceTime, do the same thing in Settings>FaceTime.
For Purchasing, do this in Settings>iTunes & App Stores.
For iCloud, you'll have to delete the account, create a new account with the other ID, and migrate your data to the new account. Before deleting the account, if you have any photos in photo stream that are not in your camera roll or backed up somewhere else save these to your camera roll or you will lose them. To do this, open the photo stream album in the thumbnail view, tap Edit, tap all the photos you want to save, tap Share, then tap Save to Camera Roll. Once this is done, go to Settings>iCloud, scroll to the bottom and tap Delete Account. When prompted about what to do with the iCloud data, be sure to select Keep On iPhone. Next, set up a new iCloud account using a different Apple ID (if you don't have one, tap Get a Free Apple ID at the bottom). Then turn iCloud data syncing for contacts, etc. back to On, and when prompted about merging with iCloud, choose Merge. This will upload the data to the new account.

I wanted change my Apple ID username and email address but Apple makes me create a new ID because I can't change my username, so I created a new Apple ID. When I added it to the iPad, I didn't reallize it would make it an additional ID instead of just switch me over, so now I have apps I can't update or remove without signing into the old Apple ID. Apps are always tied to the ID that was used to purchase them originally. Did you try entering your old password and see if that works?
If you need to sign out of your old account go to Settings>Store>Tap on your ID and sign out. Sign in with the new one.
you can also access your ID in the featured tab of the App Store. Swipe to the bottom of the screen and you will find it there as well.

Welcome to the Apple community.
This feature has been introduced to make stolen phones useless to those that have stolen them.
However it can also arise when the user has changed their Apple ID details with Apple and not made the same changes to their iCloud account/Find My Phone on their device before upgrading to iOS 7.
The only solution is to change your Apple ID back to its previous state with Apple at My Apple ID, verify the changes, enter the password as requested on your device and then turn off "find my phone".
You should then change your Apple ID back to its current state, verify it once again, delete the iCloud account from your device and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

Delete everything bought with the old Apple ID and buy it again.
Content and Apple IDs -
Content is forever tied to the Apple ID that bought it. Apple does not transfer content from one Apple ID to another. Apple does not merge Apple IDs. You will never be able to access your content bought with one Apple ID with a new Apple ID.

Make sure you enter your new Id in settings/message, settings/facetime. ANy content that you downloaded with the old ID is forever linked to that old ID and if you have apps that were downloaded with the old ID and you want to update them you can only do that with the old ID. You could delete those apps and downlad them again ( and pay for them if they are not free apps)
