You will need to select the attachment and open in another app. If you do not have any apps that support PDF, Adobe reader for iOS is free.
For MS word files, you will need an app that supports those, like Documents to Go.
There is not generic file storage area in iOS, so you need to "open in" an app that supports that file type so that app can then add the file to its sandboxed local storage area.
If you need to markup the PDF, some good apps are GoodReader, iAnnotate, PDF Expert, GoodNotes - there are numerous others as well in the App Store.

Long hold on the document in mail and it should give you the open in... option, select adobe reader and the file is now saved locally for viewing even while offline.

Well..... sort of depends on your version.
If you have any version as part of CC subscription, the latest updates are supposed to be using a cloud-based service to generate the IDML for you so that you can open the newer files seamlessly.

The site is probably using pointer movies which may indicate that the movies are streaming and so cannot be saved. I'd suggest checking with site's support staff and ask if the movies are downloadable or are streaming only.

The solution I follow was to convert my file using an online service, converticon.com. Nevertheless I still would like to know how can I do this using photoshop.

You need an app into which it can be saved. Download iBooks or Adobe Reader which are both free in the App Store, then you can save the PDF files into one of those apps. I prefer Adobe Reader because you can annotate, highlight, rename create folders, add your signature and do some other things that you cannot do with iBooks.
After you download one of those apps, tap the PDF file in order to open it, than tap on the screen somewhere in order to make the sayer icon appear in the upper right corner. Tap the share icon and then select Open In iBooks or Adobe Reader from the resulting pop up window. That will save the file to the app.

I have saved large PSB files but LR doesn't recognize them. They are greyed out.

LR does not support layers so if You save a Layered Tiff or PSD that LR can open I believe all you would wind up with is a composite layer for the file content. Since Lr can not use layers and image file formats use compression I get the impression that a single layer document would need to a have very large amount of pixels to generate a compressed file that is over 2GB in size. I don't think I would even want to use Photoshop on a image that contains that many pixels. I don't use Lr so PSB is not a problem for me. Still Photoshop is a Pixel Editor however I don't think it would be very useful manipulating a billion pixels or more. I also don't know why someone would want to use LR on a layered file I don't believe Lr can save a layered file.
I have no desire to even download Lr for I I'm not very organized and can't type. So I have no need for Lr library and databases. Also I don't want two UI over Adobe RAW Conversion engine. One Adobe UI is a better option to me.
Tiff format files I beleive has a 4GB size limit PSB format files does not have that limit. Using your logic why offer Tiff they can not save large documents.
PSD was around before we had the need of huge image file. Many PSD exist they should not be rendered useless for lack of support.

The way to save an XML Document is using a Transformer.
To have access to a transformer use the packages :
import javax.xml.transform.*;
import javax.xml.transform.dom.*;
import javax.xml.transform.stream.*;
Then for saving your Document Object (named dXml) get a Transformer Object with the TransformerFactory Object :
TransformerFactory tf = TransformerFactory.newInstance();
Transformer t = tf.newTransformer();
Now you have got your Transformer Object, to save your Document Object use the method :
Document dXml = getMyDocument(); // this is your Document Object.
OutputStream osSave = getMySaveStream(); // this the OutputStream you need to save your Document.
try
t.transform(new DomSource(dXml), new StreamResult(new OutputStreamWriter(osSave)));
finally
osSave.close();
And your Document was now saved.

In that Web App,it will:
1. save log files to a virtual path (for example, save to $WEBAPP_ROOT_DIR/LOGFILES/
2. save ViewState by session as temporary files to a virtual path (for example , save to $WEBAPP_ROOT_DIR/VIEWSTATE/
3. upload some image files to the web server virtual path at $WEBAPP_ROOT_DIR/UPLOAD/
so, when I migrate the web app to windows azure,how can I do the same job in my code?It seems so many great changes in my code ...

If you use Azure website, you can save your log and files into azure storage service ,such as blob or table.
If you use VM to host your service, you can only attach a data disk or file service on your VM and save your data into data disk or file service.
