they don't show on HER computer (the downloaded or purchased ones). They don't show up on the music list, and the photos don't show up, and she can't sync it. Do I need to authorize her on my iTunes, or should she set everything back to factory settings, or what? Is there anyway for her to re-register on iTunes and just start over? What exactly do we need to do? I just want her to be able to use the thing on iTunes, even if the songs need to be erased. (And yes, I now know it would have been better to just gift her the songs, so don't bring that up please.)

They won't show on her computer unless and until they get copied to it. See:

Though it refers to items purchased from the iTunes Store, it applies to all the tracks and videos. And since she happens to own an iPod:

If the tracks were purchased through your own iTunes Store account, yes, her computer will have to be authorized to that account before any of those tracks can be copied from the iPod or played on her computer.

Sure, it will work just fine that way. Leave the deactivated sim in the phone, as you'll need it should you ever have to restore or upgrade the software on the phone. You can't activate any GSM iPhone without a valid sim in the phone.

That message means you have a 2G iPod. Those can only go as high as iOS 4.2.1 and does not support Open GL ES.
To more easily find compatible apps:

Apple Club - filter apps by iOS version.

I have a couple of steps for you to try in order to get those songs transferred to your iPod touch. First, make sure all of your software is updated with the latest versions. If the songs were downloaded from iTunes, you will also want to delete the songs from your library and then download them again from the list of past purchases on your iTunes account. If you try a sync after those two steps and are still seeing the issue, then I would like you to try syncing the iPod by setting it to manually manage. An article outlining more information on manually managing your iPod sync can be found here:

You cannot use someone else's apps without violating the license agreement. The apps are tied to the owner (via Apple ID). The right thing to do would be to update and start fresh.
