was this the first time that you connected the iPhone? If so, is your iPhoto Library empty? if you did not change the settings in iTunes ever, the sync is going as soon as you connect and the iPhoto Library is "synced" to your Phone: Read iTunes Preferences and set it corresponding to your wishes.
The Camera Roll should still be on your Phone, cannot be deleted (only what is in it). Try a sort of Finder App to see what is on your Phone, for example "PhoneExplorer" or "Diskaid" on your Mac (connect your Phone).
