I did a backup of my phone accidentally. can i undo it?

i was trying to set up my dads phone with itunes and it insisted on me restoring it to a backup from his old i phone from back in sept of 2012 or factory reset so i did the restore of backup and now he lost all his contacts and messages from the past year. i need help. Is there a way to redo this mess and go back to the way it was?

I have 3 iPhones and 3 iPod syncing without problems on one computer.
Go to Settings > General > Reset > Reset All Settings.
On your mum's iPhone go to Settings > General > About > Name - put in your mum's name so that iTunes can tell them apart.

Delete the account from your device (settings > iCloud), opt to keep contacts when asked.
You will both need to delete unwanted contacts on your own devices manually after performing the step above.

First, back up your old iphone manually:
Disable autosync in iTunes, connect your phone to your new computer and right click on it in the device list and choose backup. iTunes will backup your phone without syncing.
Transfer your purchases the same way, choosing "transfer purchases" this time.
When you connect your old phone for the first time, all media content will be erased. But you can restore your settings and app data from your manual backup afterwards.
Don't forget to set up at least one contact and event on your new computer to be able to merge calendars and contacts when you sync the phone for the first time.

After that, connect your new phone and let iTunes set it up. iTunes will detect the old 3G backup and ask you, if you want to use it to restore the info on your new iphone. If you agree, all settings and data will be present after the process is finished.

When i try to restore my Back up using Itunes this is the message i get - "Unable to restore backup as the software is old - Please setup as a new device and then try to restore your backup" - Please advise. Nope - you cannot restore a backup from a newer iOS version on to a device running an older iOS version. The reverse works, but in your case to use your backup, you must update to iOS 7.0.3 - no other option if you want to use that backup.

Can I use this to restore my develop settings. I also have jpgs generated from all the deleted images.

if you have a backup of your catalog you can do the following:
1. Backup your catalog first
2. Restore your backup catalog to some location
3. Open your current catalog and select "files->import from another catalog".
4. Select your backup catalog and your lost images. LR ask you if you want to overwrite the current settings or save them as a virtual copy.
As an alternativ you can open your backup catalog, select the "lost" images and save the development settings as xmp sidecar fiels (using ctrl-s). Then open your current catalog, seletct the images and use "Metadata->Read Metadata from files".

To download any photos that were on your My Photos Stream, then you will need to have Photo Streamed turned on within your computer. Keep in mind that My Photos Stream only holds the last 30 days of photos and those will be the only one that will download. You should really read the manual.
"How do you restore from backup? "
Restore. When given the choice, choose to use backup.
"And how can I check to see if the pics and videos are on my computer somewhere first??"
They would only be where you put them. What program did you use to import them? Pics/vids taken with ipod are not part of the sync process at all. You should be importing them just as you would with any digital camera.
If you did not import them, then they are not on your computer.

Please see the bold. If you're out of icloud storage, then you won't be able to backup to icloud unless you purchase more storage, but yet you said you backup to icloud.
If you really did backup to icloud no data would be loss - sounds to me that it didn't backup since you had no more free icloud storage space.
