I drag text to desktop and am unable to print. Can someone clue me in?

When I drag text from the net, to desktop...I am unable to alter it. Is it in pdf format now?
How do I edit, print, etc. these words?

Those are clippings. They cannot be altered or printed in the format that they are in. Basically, it is useful for just storing the equivalent of a sticky note.
To edit them or print them, you need to drag them into a word processor or text editor. Then you can edit or print them.
I use them quite a bit to save on typing things that I re-enter a lot. I have a clipping of something that I always say or use in it's exact same form, and then I just drag that clipping to my document when I want it. It can save me typing the same paragraph over and over again. And, it's already exactly as I want it.
It's a very useful feature. But, it is limited to serving it's one task. Storing text for quick insertion somewhere else (or for quick reference).

I have found a temporary solution, allowing the previous version of iTunes (v. 11.1.3 (x64) in my case) to be re-installed. Simply, sharing video via email is not advisable.
Many email services have an attachment limit of 20mb and some a limit of 10mb. As emails are sent through an array of relays, the effective limit is the smallest file size allowed on any of the relays. That means that video is rarely suitable for emailing.
Then there's the whole issue of Codecs and not all machines will have the codecs to play all videos. Plus, folks with slower connections can find it very inconvenient to download large video files.
Finally, sharing video from iPhoto via email is not supported. All that gets you is the Movie thumbnail. If you feel you must share via email then you'll need to export the video first, and attach that. Use the File -> Export command and set the kind to Original.

Other than that your options include:
Upload it to a sharing site like YouTube or Vimeo and email a link - these will allow the recipient to view the material online. That will avoid the codec issues mentions, and the person can still download the video file if they wish.
Upload it to sharing services like Dropbox or YouSendIt and email a link. This will require that they download the material to their machines to view.

What exactly happens when you try to update the iPod? What does the error message say?

This is what it is and what it does. You both have to have iOS 5 installed on your supported device. If that's not what your setup is, then that's your answer.

Recovery Mode
1. Disconnect the USB cable from the device, but leave the other end of the cable connected to your computer's USB port.
2. Turn off the device: Press and hold the Sleep/Wake button for a few seconds until the red slider appears, then slide the slider. Wait for the device to turn off.
3.While pressing and holding the Home button, reconnect the USB cable to the device. The device should turn on.
4. Continue holding the Home button until you see the "Connect to iTunes" screen. When this screen appears, release the Home button. iTunes should alert you that it has detected a device in recovery mode. Click OK, and then click Restore to restore the device.
Note: Data will be lost. You may have to repeat the above many times.

In iTunes, go "Help > Run Diagnostics". Uncheck the boxes other than Network connectivity tests, as per the following screenshot:

The only app you specifically mention is meta tube. No way to tell from the description on the app page where they source the material (I suspect primarily YouTube), and no reviews as of yet. You might want to contact the vendor.
If you are getting the same results from established streaming apps, such as YouTube or Jasmine, I would say you have a connection speed issue (keeping the stream from properly buffering). Hard to say.
Try a rest: Simultaneously hold down the Home and On buttons until the iPad shuts down. Ignore the off slider if it appears. Once shut down is complete, if it doesn't restart on it own, turn the iPad back on using the On button. In some cases it also helps to double click the Home button and close all apps from the tray before doing the reset.

Are you able to receive any mail at all? If not, make sure that all of your information for mail is accurate in settings again. if you still have nothing, go to your email through safari. (example: www.yahoo.com) If you do not see the emails here either, it is a problem with the password reset server not your mail app.
