I entered my gift card under the wrong email account. How can I change it? It is really hard getting support from iTunes. It keeps throwing me back to Apple.

If not, then it will bring you to a screen that will show you your name, your email, and any alternate emails you have. Click the edit button next to "Primary Email Address and Apple ID" and change it to your email.

The HT1541 page that you posted from has instructions for how to resend a gifts from your iTunes account - assuming that the address that you originally sent it to doesn't exist and it hasn't been redeemed.

You don't change it.
It will use any account balance first, once it is gone, then it will go to your credit card.

You can just abandon the ID and set up a new one. Go to Settings>iTunes and App Stores>Apple ID. Tap the ID that is showing in there and sign out. Then you can create a new ID right in there.
You will need to use another email address in order to create the correct ID, so I assume that is not going to be a problem if the first email address was wrong.

Go to Settings>Mail, etc.>iCloud and delete the account. Then add in a new account with the details you want.

Sorry but no. The credit available from a gift card cannot be transferred between accounts.
