You do not.. the iPhone is not a backup device.
Copy the entire iTunes directory from the old computer or the backup of the old computer to the new computer.

    If you network your two computers together, you can transfer the song files directly, without having to use a flash drive in between. You may also want to consider getting a backup drive. You can get lots of space for not so much money these days, and with an automatic backup system, it can really save your bacon if your computer goes down, which is an additional benefit to just transferring files from one computer to another.

    If you have made backups of your desktop before it crashed it's a simple matter to restore the backup to your repaired computer. I hope you did this, because it's likely you lost much more than your purchases.
    Restoring purchases is easy; you just download them again.

    If you put it in the default location of Macintosh HD > Users > *User Name* > Music  then you don't even need to start with the option key held down, iTunes will automatically look for it there.  (Make sure there isn't anything already in the iTunes folder there that you want to keep since you will be replacing it with the one you are moving.)

    iTunes purchases can be redownloaded.
    Computer: Open iTunes Store and click on Purchased in the Quick Links section on the right.
    iOS: Open the iTunes Store app > More > Purchased
    Non-iTunes purchases will be lost.
    If you didn't have your music backed up then you would need third party software such as  TouchCopy to transfer your music back to your computer so you can add it to iTunes and sync.

    You'll have to move your music and library from the old computer. The iTunes library is a database that links to the songs on your hard drive, neither the library files or the songs will get to your new computer just by installing iTunes.

    Probably the most straightforward way to get iTunes onto your new computer is to network it with the old one and copy your iTunes folder across. This works fine if you have been using iTunes to completely manage your music and all your songs are in iTunes Music not in different folders. You can also use this method with an external hard drive, you drag the folder from the old computer to the external drive and then from the drive to the new computer. If the songs in your library are not all in the iTunes Music folder you can consolidate them. When you consolidate, any songs in the iTunes Library that are not in the iTunes Music Folder are copied to the Music Folder and the Library is updated to point to those new files. Everything has to be exactly the same on the new computer including the Windows user account name. When you open iTunes on the new computer it will be the same as on the original one Songs, Playlists, Play Counts, Ratings etc. You should also use the same version of iTunes on both computers.

Apart from the sections on initially setting up the iPod, the instructions are the same for copying the iTunes folder to an actual external drive.     You don't need to open iTunes on the old computer.
    Simply copy the entire /My Music/iTunes/ folder from old computer to /Music/ on new computer.

    After my hard drive failed I had a similar problem. I bought a couple of cables, one that plugs from a wall 110 power outlet to the power port on an internal hard drive, the other that plugs into the data port on the internal drive into a USB2 port. After powering up the loose internal hard drive and connecting the communication cable I powered up my new computer. I was able to read the loose hard drive by opening up "My Computer". From that point you can move files from the old PC to the new one. It worked fine for me and saved my collection.
    I got the cables as a set at a MicroCenter store in Dallas, TX, after asking advise from the store's repair department.
