There is setting in iTunes, on the iPod's Photos screen (where you set up syncing of photos) for Include full resolution photos. Or you can sign into the iTunes Store in iTunes on your computer and go to Purchases > Not on This Computer > Download all for each tab across the top.
If you have any music that was imported from CDs to your Dad's computer, you'll need to import those to your laptop. By "tabs", do you mean something like this -

Right-clicking or Control-clicking on an icon in the Dock will bring up a menu like that (it is a contextual menu, so its content varies a bit from program to program).
Usually, it is necessary to only click an icon in the Dock once in order to start up the program (if it has been quitted) or make it active (if it has not been quitted).

There is no "adding" a device. Simply plug the iDevice into the computer. iTunes should automatically detect the device when it is connected.
iTunes can sync/manage as many iDevices as you want... there is no 1 device limit.

Unfortunely, all movies and songs purchased in iTunes will be lost...you'll have to purchase them again! Any applications you've purchased, you can download again for free.

On the computer in iTunes log into her Apple ID and then see if recent purchases are shown by clicking on her name in iTunes, entering her password and then selecting the option. If there is nothing there then she bought that music with a different Apple ID.
You can use TouchCopy to move all the songs on the iPod to the computer. Then try to play one of the purchase songs and it should show the account used to purchase it and ask for the password.
