I have about 75 iPads and iPad2s in the enterprise. Want to update to iOS5 but the computers they were originally sync'd to are gone or elsewhere. Is there a way to sync 75 to one computer? The Apple store said NO, unless you want to lose everything.

The Apple store said NO, you can sync but you will have to rebuild every iPad. This cannot be true........can it?

Old computer crashed - have iPhone 4, want to update to iOS5, but need help.

I'm hoping someone can help me. My old computer crashed, and had to get a new one. I lost my iTunes, and didn't have a back-up. The only place I have the data is on the phone itself. I had to re-install iTunes on my new computer, and I want to update to iOS5, but I'm worried I'll lose everything on my iPhone, as I don't have a back-up. How do I take the data (pictures, contacts, email, etc.) from my phone and put it on my computer, so I can update to iOS5, and have a back-up in case I lose it? I already transferred the purchases, so I have all of my apps on my new iTunes, but I don't want to lose any other data. I have Windows XP and an iPhone 4.

Welcome to the Apple community.
You can only restore them from a Computer backup. This has occurred because you are sharing an iCloud account. ideally you should each have your own iCloud account, that way you can each manage your own mail, contacts, calendars, documents etc and avoid unintentional deletions and unwanted editing. If there is information you wish to share between you, this can be done with a secondary account.
Having separate iCloud accounts, doesn't mean you have to have separate iTunes accounts, so whilst you keep your personal data separate, you can continue to share music, apps, books, TV shows, movies etc.

I believe you just are able to delete them from iTunes.

Where are you looking for them, iTunes or the Mac App Store ? If you bought them from the Mac App Store and you are signed in with the same account that you bought them with, then do they not show in the Purchases tab in the Mac App Store for re-downloading ?

Read the license agreement . There will be a lot of impenetrable legalese gobbledygook in it, no doubt, but I bet it will be crystal clear on the subject of how many computers the software can be installed and activated on at once.

You can not login into iTunes or the App Store using VPP credentials. You must purchase all apps/book/etc. from the VPP website. Then you can redeem the codes thru itunes/app store or import the codes thru apple configurator. (It will not affect any of the apps you already have but the id can only be used for VPP.)

Also, I'd prefer to keep the same ID on both so I will keep access to my calendar/contacts/etc on both devices. Would I be able to share reminders and voice memos and the like as well? If you are using the same Apple ID on both devices, the Game Center profile should be the same.
Check out this information from the iPad User Guide. Try signing out of the Game Center on both devices and then sign back in with the correct Apple ID:

Why are you using a usb ethernet adaptor? Just plug the modem into the usb port.

Home Sharing is designed to work on your local network not across the internet/cloud.
Stuff is accessed under the Computers column where your local iTunes library on a local computer would appear.
Home Sharing would share your iTunes content (i.e. stuff stored in itunes on the computer, not in the cloud) with AppleTV or an iPad etc on the SAME network.
AppleTV2 will not be able to see itunes content on the work computer over the internet. It's not designed to. if the work computer was on the home network it would.
iCloud is in it's infancy and is not a mature product - iTunes TV Show purchases appear on AppleTV, but currently music does not unless you are subscribed to iTunes Match. I find this rather odd to be honest, along with the inability to buy music on AppleTV2. Movies purchased in iTunes are not authorised for iCloud viewing currently either.
Maybe it has something to do with iTunes Match 'getting in the way' - i think they assume you'll use that whereas you really want to be able to access Purchased music from the cloud without subscribing to itunes Match which is overkill for some.
