I don't know OS X server but presumably it's a lot like Mac OS X in which case all you need to do is going in System Preferences -> Users & Groups -> Click on the lock at the bottom left if it's locked to unlock it.
Then you select the user account you wish to delete and click on the minus sign under "Login Options" in the bottom of the users table.
As far as I remind it will ask you wether you want to delete or not the selected user's data.
PS: you need an admin account to do that. If that user you want to delete is the only one then you must create one using the plus sign instead of the minus one and check the "Allow user to administer this computer" box. Then log out from user #1 account and start a new session with your new account.
