No, it stays with the current OS (iOS5 in this case) - Apple doesn't allow downgrading iOS
If you are syncing to a desktop, you shoudln't lose anything. If you aren't syncing, then that's the first thing you should do, to protect contacts etc.
the other thing is, when the iPad is connected to iTunes, right-click its name in the Devices list and choose Back Up.
That way, when yoiu do the restore, everything should come back as was.

Snow Leopard, Mac OS X 10.6, is not iCloud compatible. You need to upgrade to Lion, Mac OS X 10.7, via a download from the app store...$29 (US), provided you had at least 10.6.6. You can upgrade to 10.6.8 for free as part of the software updated function, then go to the app store and purchase the Lion download.
When you do that, before installing Lion, make a copy of the Lion Installer from the Applications folder where it downloads to some other location, such as your Documents folder, so you have a backup copy.
For Lion you must have at least an Intel Core 2 Duo, i3, i5, i7, or Xenon processor, 2 GB memory though 4 GB is better and 7 GB free space on the hard drive.
As part of 10.7.2 you end up with the iCloud connection.

Is your iPad jailbroke? If it is, all bets are off. If it is not jailbroke, keep reading.
First, try a system reset. It cures many ills and it's quick, easy and harmless...
Hold down the on/off switch and the Home button simultaneously until you see the Apple logo. Ignore the "Slide to power off" text if it appears. You will not lose any apps, data, music, movies, settings, etc.
If the Reset doesn't work, try a Restore. Note that it's nowhere near as quick as a Reset. It could take well over an hour! Connect via cable to the computer that you use for sync. From iTunes, select the iPad/iPod and then select the Summary tab. Follow directions for Restore and be sure to say "yes" to the backup. You will be warned that all data (apps, music, movies, etc.) will be erased but, as the Restore finishes, you will be asked if you wish the contents of the backup to be copied to the iPad/iPod. Again, say "yes."
At the end of the basic Restore, you will be asked if you wish to sync the iPad/iPod. As before, say "yes." Note that that sync selection will disappear and the Restore will end if you do not respond within a reasonable time. If that happens, only the apps that are part of the IOS will appear on your device. Corrective action is simple - choose manual "Sync" from the bottom right of iTunes.
If you're unable to do the Restore, go into Recovery Mode per the instructions here.

However, when I try to update it wil not allow it. It tells me to go to ITunes, which I have done, and still it will not download it, saying that my IPAD is not compatible.   All of this if fine if Apple wishes to do things this way, but I just want to stop being notified every time to update it, if I am not going to be allowed to do so.

The updates for Numbers and Pages are perfectly compatible with the iPad 1. I'm not sure what you are doing; perhaps a better explanation of what you are seeing is needed.

TS3274 I have the original iPad- 18 mos old. I tried to download an app that required flash player. Went to the apple store and was told to update my software to iOS 5.1.1. I did and now everything I had previously installed as apps are frozen. :( HELP!

I went to the apple store and they told me to update my software to iOS 5.1.1 which I did . Now none of the apps I had installed prior to this work. The icons are still on my screen but when you touch them, it just blinks and nothing happens..like the screen is frozen. You must use iTunes. Connect your device to your computer, open iTunes, select your device in the sidebar and press Restore. Then, you can restore your device from a backup, and sync the device with iTunes to transfer your files to it pressing Sync button

For the charging via USB, a lot of computers don't provide enough power to their USB ports to charge an iPad at a sufficient rate (it may still be charging, especially if the iPad's is locked and the screen is off), the iPad's own wall charger is generally the best way to charge it.
