You can create up to 3 alias addresses but you have to do this on icloud.com from your computer browser. This article explains how: http://support.apple.com/kb/PH2622. I have the same problem. I changed my email address with itunes, & the icloud website knows it too. but the icloud on my iphone still has the old one & wont allow me to change it.
