I have forgotten my ipad2 icloud password how can i retrieve/change it?  also how can i delete my old server?

If you don't have access to that email account, and you can't get it reset via http://iforgot.apple.com (you don't remember the answers to its security questions ?), then try contacting Support in your country and see if they can reset the password for you.

    As stated in the support article, you can do this from any computer.
    Use Find My iPhone
    If you enabled Find My iPhone, you can use it to erase your device.
    Go to icloud.com/#find to see if you enabled Find My iPhone.
    Click All Devices at the top of your browser window.
    Select your device and click "Erase [device]" to erase your device and its passcode.
    Use the Setup Assistant on your device to restore the most recent backup of your device.
    Use recovery mode
    Follow these steps if you never synced your device with iTunes, if you don't have Find My iPhone set up, or if you can't get to your own computer. You'll need to put your device in recovery mode, which will erase the device and its passcode. Then you'llrestore your device as new or from a backup.
    Disconnect all cables from your device.
    Turn off your device.
    Press and hold the Home button. While holding the Home button, connect your device to iTunes. If your device doesn't turn on automatically, turn it on.
    Continue holding the Home button until you see the Connect to iTunes screen.
    iTunes will alert you that it has detected a device in recovery mode.
    Click OK, then restore the device.

    Igpf you have not made a recent backup of your data and have synced to the computer before, make sure and create one before restoring.

    The only other place to change a password for the computer login is in Users & Groups preferences. But I don't really know enough here to fix your problem. You can try fixing the keychain:

    If you can't access your keychain, or forget your password If you can't get into your keychain file because you've forgotten your password or the keychain file appears to be corrupt, there are a couple of options.
    First, if you've forgotten your password, you can use the "Keychain First Aid" utility to make the keychain password the same as the login password. This can be accomplished via the following process:
      1. Open Keychain Access (located in Applications/Utilities)
      2. Go to the "Keychain Access" menu and select "Preferences"

    Persistently asked for stored passwords If you are persistently asked for passwords in various applications that you have specified should be remembered in a keychain, your "login" keychain may not be active for one reason or another.
    Navigate to ~/Library/Keychains/ (this is the Library folder inside your user's home folder). Find the file named "login.keychain" and double-click it.
    Failing that, select the "login" keychain within the Keychain Access application and make sure it is the default keychain by going to the "File" menu and selecting "Make 'Login' Default"

    Have you tried a soft-reset ? Press and hold both the sleep and home buttons for about 10 to 15 seconds (ignore the red slider if it appears), after which the Apple logo should appear - you won't lose any content, it's the iPad equivalent of a reboot.

    If on a Mac, and you elected to save such to your Keychain, you can recover it from your Keychain. Otherwise, you can't.
    While you can continue to sync/backup, if you can't remember it & want to remove it, you'll have to delete your existing backups & restore the phone as a new device. Your data will be unrecoverable.

    FORCE IPAD INTO RECOVERY MODE
    1. Hold Sleep/Wake button down and slide to turn off iPad
    2. Turn on computer and launch iTune (make sure you have the latest version of iTune)
    3. Plug USB cable into computer's USB port
    4. Hold Home button down and plug the other end of cable into docking port. Do not release button until you see picture of iTune and plug.
    5. Release Home button.
    ON COMPUTER
    6. iTune has detected iPad in recovery mode. You must restore this iPad before it can be used with iTune.
    7. Select "Restore iPad"...

    However I have forgotten the backup encryption password so I deleted all the backups on iTunes, hoping that it would allow me to reset the backups without the encryption. Is it possible to remove the encyrption without deleting my iTunes? I would like to create a backup from scratch without removing music and videos saved on my iTunes. Help?

    Check your iKeychain.  The password may be listed there.  Mine was listed under an IP address and user name to my old work computer.  I had used my phone to access work emails (government) that were encrypted.  I didn't actually select the option to encrypt my backup itself but it did require a password when I went to restore.  The password ended up being one I set up when I set up my email account to my phone and viewed those emails, not one I actually set for iTunes directly related to the backup.  Once in iKeychain (Safari, Passwords & Autofill) I was able to view a list of all passwords ever used on my phone and had every intention of trying every single password one by one, but it ended up being the first one listed. Hopefully this helps.
