I have no idea how to update my apps on my iPod using the new iTunes

My iPod Touch says that I have 27 updates which I know is right but when I click to go on the Apps Store and update them it just takes me to a white screen...
So I tried using the newly updated iTunes which I'm not use to yet but I don't have a clue where to find a "Check for updates" link for my apps. I'm finding it diffiuclt to even simple things...
Any help would really be appreiciated!

You can only update via the ipod with ios 5 or later.
You need to update via itunes on your computer as always.

Do you mean remove them from the iPod or transfer them back to your computer? You can't transfer photo's back to the computer with iTunes. To retrieve photos from an iPod try:
iPodPhotoCopy Windows only
CopyPodPhoto Windows only
iPod Photo Liberator Mac & Windows
To remove individual photos from an iPod you delete or remove the photo from the folder that you linked to when you set the preference "synch photos from" and update the iPod. For example, if the iPod is getting the pictures from the folder "My Pictures," delete or remove them from My Pictures.

I have a new ipod, and the new itunes. I cant find any itunes version information, but it downloaded on the 27/9/13
The old itunes showed your library and ipod icons on the left, and I could simply drag music onto the ipod icon.
With the new itunes, there is no ipod icon to drag music too. I certainly dont want to put all my music onto ipod, or have it pick songs randomly. I have way too much music for itunes, I basically drag some albums to itunes, copy them to the ipod, then delete them from itunes. I have to do this for 2 reasons, one is that my music is spread over various places, and usually when you plug in an external drive it gives it a different letter, so you "lose" music, and secondly because much of my music doesnt have correct tags because I ripped it from my CDs before there was internet databases (yes I’m old).
Any ideas how I get an album from a HD onto my ipod?
Does anyone else find itunes inexplicably unintuitive?

It sounds like you may want to show the sidebar in iTunes. You can access it again by following this:

Show Sidebar - Choose View > Show Sidebar (this feature will display iTunes features on the left side of the application including Library, Store, Shared, Genius, and Playlists).

Use it the same way as previously.
ctrl B shows the menus.
ctrl S shows the sidebar.

With the new iTunes, I can't seem to be able to update playlists on my iPhone device when plugging it in. I can add songs to the playlist and can add songs to my device. However after adding songs to a playlist, I can not update that playlist on my device with the new iTunes. You will need to find a forum for MS Word since that is the software that you are trying to manipulate in this. If you think the processing/creation of the PDF plays a role then you should ask in the forum for the software that you are using to create the PDF.

to to apple menu -> software update or system preference -> Software update
( you may try to use an old package on new system )

All apps - all paid and free apps include DRM protection which is tied to the iTunes account that was used to download the apps. You can't transfer iTunes content downloaded with one iTunes account to another iTunes account or merge accounts.

You can go back to the old view with the left-hand sidebar via View > Show Sidebar (if you are on windows then alt-v should show the View drop-down menu) - which is what I'm currently doing as I'm familiar with that way.
Or, on the new view you can click on the library type at the top left and select Apps and then Check For Updates at the bottom right of the screen. When you've downloaded the updates to your computer, click on Library top right to go back to your library view from the store, then select the iPad (top right) and Sync at the bottom right should then copy the updates to your iPad.
