I don't know what generation of iPot touch I have. If I am unable to download my paid apps because my iPod is too old, I'm not going to be pleased.

Does iTunes not see the phone?
If not, make sure you're running the current version of iTunes.

As for iPhoto, you will have to purchase a newer version. It's not a free upgrade. Or, you can use Image Capture, which is built into OS X, to import the photos.

Apple Club - filter apps by iOS version.
Starting when iOS 7 was releases, Apple now allows downloading the last compatible version of some apps (iOS 4.2.1 and later only)

You first have to download the non-compatible version on your computer. Then when you try to purchase the version on your iPod you will be offered a compatible version if one exists.

If the problem re-occurs, select the content which is causing a problem and use the 'Report a problem' button in Your Purchase History using your computer.
Try deleting the problematic book (electing to remove original file if/when prompted) and then re-downloading the file from the iBook store.

Sorry to say that you may be at a dead-end as far your your device goes. You can't update to any iOS version above 5.1.1 due to hardware limitations of the iPad 1st gen...thus, you cannot use newer apps that are released. Use the link that Niel provided. You are still able to use the apps that are currently on the device but as far as newer apps that require iOS greater than 5.1.1, you're stuck.

Unless the iPhone was purchased as unlocked very recently directly from an Apple Store (the only place in the US where unlocked iPhones are sold, and then only since June), which from the symptoms I doubt is the case, then it was locked to AT&T and jailbroken to make it work with an Irish cell carrier. Updating the operating system has now relocked the iPhone back to AT&T.
Only the cell carrier can institute an official unlock, one which will hold across updates of the operating system, and AT&T will not do so for any reason. All we can advise here is that you return the iPhone to your uncle and purchase an iPhone there in Ireland.

It sounds like you are looking to use your iCloud storage to upgrade your operating system. To upgrade you actually need the storage on your iPhone to have that free space. You can check available space on your iPhone under Settings > General > About, then you will see the available space next to Available. It keep happening everytime I turn my laptop off, I thought I had solved the problem the other week however it has started back up again. I have a Sony Vaio laptop and have read on the discussions that this can occur but all the solutions I have read haven't seemed to solve it. Anybody else got an idea? I am trying to add new songs from Itunes to my Iphone but getting the message "This phone cannot be used because the rquired software is not installed. Run the Itunes installer to remove Itunes, then install Itunes again". This is the first time that I have had this issue as I have not had this message in the past. This must be a common thing but I don't what know what to do next. If someone would be kind enough to send me some advice, I would appreciate it.

You are in Windows; you already have inserted your OS X DVD and run SETUP and installled Boot Camp 3.0.x (shows in Windows control panel: Programs and Features.
Start => Apple Software Update (also in Windows) will download and install updates as well.

Thank you! My solution was slightly different, but in the end, seeing what was going on in the Help menu in the browser did the trick. Turned out I had been stuck for who knows how long "downloading" a version 3! Also had a toolbar to disable but not the Ask.

Try resetting the iPhone,
Reset your iPhone by pressing the 'Sleep' and 'Home' button at the same time for about 15 seconds or so. Your iPhone will then go through a reset / reboot procedure and will be ready for use within about a minute.
Don't worry about doing this as you will not lose data or settings.
