Go to:
Settings (gear icon)
Scroll to General (gear icon) (Third option box from top)
Scroll all the way down > Select Third option from bottom (international)
Select first option (language)
Select English
Select Done

Go to the featured tab of the App Store. Swipe to the bottom and tap on your Apple ID. Then tap View Apple ID. Enter your password. Go to Country/region and change your store to the UK.

Normally, I would suggest restoring the iPad and uninstall and reinstall iTunes but you have done both of those things - more times than you ever imagined!
Have you thought about turning auto syncing off?
Without connecting your iPad to your laptop, start iTunes. Click on Edit. Click on Preferences. Click on Devices. Check the box next to "Prevent your iPod etc. from automatically syncing." Click OK.
If you do this you can backup the iPad right away before it syncs. You may want to go into all of the iTunes tabs and just make sure that all of the current content on the iPad is selected to sync before you actually do sync.
This doesn't solve the problem, but it would prevent the automatic sync and erasing content. Hopefully, in the next few days- when iOS 5 is released - you will also be relieved of this weird iPad behavior - since the iOS devices are supposed to become PC free.
BTW - and this is no excuse for what you are experiencing, but I have found that some of the game apps that I had on my iPad turned out to be quite troublesome and after I removed them, my problems went away. I know that is almost sacrilege with regard to the Angry Birds addiction .... But I'm just saying ...

Snow Leopard is required if you wanted to upgrade to Lion, anyway, which you may want to in the future if the latest version of iTunes no longer supports Snow Leopard.

Delete the data for the guest network on the iPhone, iPad, etc.
Log on to the "Guest" network
On the home screen, tap Settings, tap Wireless, tap on the name of your wireless network, tap Forget This Network.
Now log onto the network that you want to use, and the iPhone / iPad will connect to that network automatically in the future.

I understand, as that was the place I would change it before 8.3 but now that option of Mail Days to Sync is not available? Any idea why that would be?

Try to Reset it (hold down the home and sleep buttons, ignore the red off slider, wait for the Apple logo, let go of the buttons).
If that does not work try Restoring it in iTunes.
Still no go? You will need to get it serviced.

Try a Hard Reset,
press and hold both the Sleep/Wake and Home buttons for at least 10 seconds, until you see the Apple logo.

Like the title says I just bought my iPhone one week ago today and synced it up with iTunes. Now none of my games work on the phone. My Internet works I have wifi signal as well, also my txts and phone calls work so my service is fine. I've tried resetting my iPhone using the home button and the power button at the same time but that was no help. How do I get my brand new awesome great working phone back to normal? That's the whole reason I spent he money for a good phone I didn't want to have to deal with this!!! :(

This may sound crazy, but download any free app. This often "shocks" the other apps into working.

Have you got the latest version of itunes? I assume you have because you say you have iOS 6. Try a different cable or a different USB port so if that helps

YouTube was removed for their new app (only iPhone available right now), but you can access their page through Safari as it is optimized for iPad. Ipad App is not out yet, still waiting myself!
After you have it running in Safari, just click the arrow icon to ADD TO HOME SCREEN to make a quick shortcut with easy access to the link.
