You can redownload iTunes purchases by the following:
Downloading past purchases from the App Store, iBookstore, and iTunes Store
For other items you will have to get them from where you got them the first time.

If you purchased all of the songs through itunes store, please follow these steps:
1. Open up Itunes and Click on Itunes Store
2. Once you're in the Itunes Store look to right side of the screen and you should see the word "purchased". Click purchased and you'll be sent to a purchase screen.
3. Click on "All Songs" and then it will show all the songs you've downloaded. From there you just hit the button that looks like a cloud with an arrow on it, and it will download all the songs all over again.
If you didn't purchase them through Itunes, then you'll have to download software that will strip the songs from your iPod onto your computer. And here is a step by step guide show you how to copy iPod songs to computer. Hope it helps. Feel free to email me if you need further help.

However, you only can download the current version of app.
- For apps your only way is if you have the version that was compatible on your computer such as in the recycle bin/trash or in a computer file backup. In that case delete the current version that is in your iTunes App library and replace it with the older version. Then sync.

I accidentally erased everything on my iphone, how do i get it all back?

This is my mom's iphone and it was my first time syncing to my computer to give her my music, which then deleted everything from her messages to her contacts. I then restored it and it was back to how it first came without anything on it. Any idea how to get it back after that?

Just Noticed you changed your question...
Get your mom to Sync her phone with the computer she usually syncs with... and that should put her Contacts back...
With regards to the Messages... if they are Text messages they may be gone...
If after doing the sync, the messages are missing... she could try a Restore from Backup...

ITunes just wiped out most of the books on my iPod, saying device (the same one I've been using for several years) is not authorized. This seems to be a response to getting a new computer and authorizing it (while deauthorizing the five I had authorized). Device authorization in Files does not all authorization (it's pale).
How do I reload on to iPod? It's all on the computer.

Do you load content on the iPod manually (by dragging items to the iPod in iTunes), or do you have automatic sycning set up?
If it's automatic syncing, you need to select the iPod in iTunes. There is a row of buttons starting with Summary. Click on Books there. This Books screen is where you tell iTunes how to sync audiobooks to the iPod. Set that up and click Apply.
If you load content manually, just drag the audiobooks you want from the iTunes Books library to your iPod in iTunes.

I enabled the backup, but when i went to use the backup, the phone recovered everything except the music.

Of course your music was lost - unless you uncheck sync music, you're syncing with another music library. You'll have to sync your phone with the other/original computer to the music back.

If the songs are not on an iPod or a computer (didn't you have a backup of your computer files?) you are probably out of luck since you only get one download of music from the iTunes store and it is up to you to back them up. The iPhone is not a backup device. Did you not back up your computer?
If the music was purchased from the iTunes store, you can re-download it without charge. Otherwise, you will need to invest in 3rd party software to try and extract it from the phone.

Media should be included with the backup of the computer that all users should be creating on a regular basis as part of basic computer/data maintenance.
In the event that you do not have a backup (stop being lazy.... keep backups of YOUR data and other important files)
If you are in the US and running iTunes 10.3 or later, it is possible to redownload music via iCloud from purchased history.
If you are not in the US or for some reason cannot run iTunes 10.3 or later, contact iTunes customer support and ask very nicely for the opportunity to redownload the content. They are not required to provide this opportunity.
It is also possible to transfer content from an iDevice that was purchased via iTunes. On the new computer, sign into the iTunes account, authorize the computer, connect the device then select File > Transfer Purchases.
The simplest method of all is to transfer or copy the media (and other important files) from the old computer or the backup of the old computer. Typing "move itunes library" into the search bar here or into google will reveal step by step instructions on how to do this.

If not, then use it top put everything back.
The music sync is one way - computer to ipod. The exception is itunes purchases. File>Transfer Purchases
