How do I get a copy of the contract, in the version that existed when I first agreed to a data plan?

The last of the contracted unlimited data plans have expired. Therefore, no unlimited data user is still in contract. They can change anything and everything because (a) they reserve that right and (b) they are no longer in a direct contract with you.
You can change to a capped data plan at anytime, and Verizon is allowing you to make that change when you see fit. They could force it on you, but they are (a) allowing you to keep unlimited data, but be throttled or (b) use a capped data plan and never be throttled. The ball is still in your court.

The first time it happened this morning, I had actually just left my computer about ten minutes prior, having restarted it as I often do when I leave it so it will be fresh for my next session. So it shut down on the screen with all my family's usernames.
The second time it happened, a few minutes ago, I only had Mail open and Safari with just one website open, and I'd only just got back on the computer 5 minutes prior.
The only recent changes I can think of are that my husband installed 8 GB of RAM over the weekend and I moved about 200 GB of data from my internal hard drive to an external hard drive that stays connected to my iMac all the time.
This is scary; I've never heard of this happening on a Mac. And my iMac is barely 1 year old. Can you tell me what's going on? Do I need to do something to fix it?

You'll have to either call AppleCare...they'll have a record, or go back to the Genius bar where your phone was replaced.

Contact Sprint. They are the only ones that can authorize an unlock. No one else can. If they refuse to unlock, there is nothing you can do but sell the device and get another phone.

About authorization and deauthorization
Read the above link and follow the instructions to deauthorize all, then authorize the computers you actually have.
Note, only computers are authorized. iDevices are not relevant to the number of computers authorized for an account.

Not without erasing what is currently on the iPod first, since an iPod can only be synced with one computer/iTunes library at a time.
A better way to go about it, is to copy everything currently on the iPod to your new iTunes library first. Then connect it to iTunes and either choose the Erase and Sync option or restore the device to allow it to start syncing with the new library.

I wish I could remember what exactly happenned the last time I upgraded iPhoto years ago. Did my address book go kaflooey? But whateverit was, it discouraged me from any updating eversince. Believe it or not, I have been limping along with Iphoto 6.0.6 and basically faring fine, given my needs. But I would now like to be able to order prints from my photo library -- and you can't do that any longer with 6. So my question is: what are the things that
can go wrong with the later systems? And is there any way around having that happen?

Please see Transfer an Adobe product license for information about transferring your CS5 license to another company. I don't believe that there is a fee involved--but both parties need to complete some paperwork, as outlined in that document.
