That (an app no longer available) happens sometimes.
Your only way is if you have the appt on your computer such as in the recycle bin/trash or in a computer file backup. In that case move it to your iTunes library and sync.

But I'm terrified that my iMac will blow up if I only use a plug convertor and not some sort of voltage convertor (Transformer).

I'm not really hardware tech savy - is it easy to pop out the UK power cable and plug in the US power cable? Or do I need to get someone like an iMac support guy to do this? I am not sure if I understood the question,but if you meant how to attach a search help to parameter for which a default search help is not available,you can do that by using addition "Matchcode Object"
Parameter: a type i matchcode object 'Search Help Name'
Search Help name should be in single quotes.

The guy at the Genius Bar has told you absolute and utter rubbish. It is true that Apple has stopped supporting iWeb, but it definitely DOES NOT mean that your website will stop working any time soon.
They should know that iWeb is an application on your Mac and as long as it is compatible with your OS - it works in Snow Leopard and Lion and will be compatible with the new Mountain Lion out this Summer, then you can still use it to build and maintain websites.
As long as your are not publishing your site to MobileMe, then you are okay - if you are publishing to a local folder and then uploading to another host that is fine and your site will not be going anywhere in a hurry.
You don't need to change software unless you really want to.
