Go to appleid.apple.com, click Manage Your Apple ID, sign into your iCloud account (using the wrong email address), it should prompt you to verify it and allow you to edit your email there. If not, then it will bring you to a screen that will show you your name, your email, and any alternate emails you have. Click the edit button next to "Primary Email Address and Apple ID" and change it to your email.

I set up an iPad for our principal and used the wrong email address. HOw can I change it to the right one?

You can just abandon the ID and set up a new one. Go to Settings>iTunes and App Stores>Apple ID. Tap the ID that is showing in there and sign out. Then you can create a new ID right in there.
You will need to use another email address in order to create the correct ID, so I assume that is not going to be a problem if the first email address was wrong.

Welcome to the Apple Community.
Firstly, you need to change your details with Apple, Start here, change your country if necessary and go to manage your account.
In order to change your Apple ID or password for your iCloud account on your iOS device, you need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")
Providing you are simply updating your existing details and not changing to another account, when you delete your account, all the data that is synced with iCloud will also be deleted from the device (but not from iCloud), but will be synced back to your device when you login again.
In order to change your Apple ID or password for your iCloud account on your computer, you need to sign out of the account from your computer first, then sign back in using your updated details. (System Preferences > iCloud, click the sign out button)

When I set up the icloud I was using my then email address. My email address has now changed.
I tried to access under the old email address to change it to a new email address but I couldn't remember the security questions and as I can't access the old email address, I can't change it. So to solve the problem I set up a new account under the new email address. The only problem is my iphone is still asking for the old email address password which doesn't work.
How do I connect my iphone to the new account as it wont let me delete the old account on the iphone without the password (which as mentioned above doesn't work)?

Content is forever tied to the Apple ID that bought it. Apple does not transfer content from one Apple ID to another. Apple does not merge Apple IDs. You will never be able to access your content bought with one Apple ID with a new Apple ID.

I have the same problem. I changed my email address with itunes, & the icloud website knows it too. but the icloud on my iphone still has the old one & wont allow me to change it. I just upgraded my MacBook from OS X 10.6.8 to Mountain Lion so that I could stream from my other devices (iPhone and iPad) to my MacBook. After making it through the upgrade process, I realized that I used the wrong email address for my iCloud username when starting up on the MacBook. My iPhone, iPad, and iTunes are under my Hotmail email address and I accidently used my Gmail email address for the MacBook. Is there any way I can merge these two icloud accounts together? I tried changing my account information to add the other email address, but wasn't allowed because another account was using the name (duh). If I can't merge them, how could I change the MacBook from the Gmail address to the Hotmail address so that all my devices are on the same icloud account? It'd be nice if I could keep the free 5GB of storage that comes with my purchase of the software, but I'd rather lose the storage than not be able to stream.

To change accounts on your Mac, go to System Preferences, sign out of the current account, then sign into the new account. When you sign out of the current account it will delete synced data from your Mac. This was EXACTLY what I needed about the purchases I made from my device. However, is there a way to re-download other ones you've made from a computer? Because I realized some of them were not just purchased from my device.

I assume this is Apple Mail. Try this:
Preferences > Accounts > your-first-account
Select Outgoing Mail Server of account/name you wish to use and check Use only this server
Repeat for other accounts.
