Downgrading isn't supported and wouldn't help. You need to fix your phone.
1. Delete and reinstall all email accounts.
2, Restore the phone in iTunes, first using a backup and if needed as a new phone.

Chris, I clearly said what issues I'm having with ios 8: the apps are crashing all the time; family purchases aren't working; I only get an E signal when I turn the phone on. It's not my job to perform quality control or troubleshooting for apple. When I purchase the most expensive phone on the market, it is reasonable to expect that I should receive a product free from bugs.
As far as my other comment, "worst ios yet," (which everyone says after every new release) I guess that means that apple's QC is a joke. Perhaps they should continue to sign previous ipsw's after releasing a new version, or they should be honest--a beta release should be called such.

-buggy
-glitching out during games
-apps shut down on me while i use them
-battery life (apple says) lasts for 48 hours. for me it lasts 2 hours
-no way to downgrade
-terrible background choices (kinda lame, but still)
-apps are neon (ick)
-terrible design layouts
-safari ***** (as usual) with its search bar functioning as web address search as well
-mail badge says i hate not read mail when i have
-passcode can be surpassed
-game center push notifications will not go away
-will not sync with my mac
APPLE PLEASE LET US DOWNGRADE

The option to update without the computer (Over the air) was made available with iOS 5. If your iDevice is using a version of iOS lower than 5, you will need to use iTunes on your syncing computer to perform the upgrade. Use the Apple link below as a guide for the upgrade.

If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 6.0.1. For the iPad Mini the iOS is 6.0.2. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

You cannot return to previous state. The update re-locked the iPhone
to the original carrier. You must contact the original carrier to see if
they offer unlocking and if you qualify.
What does it say when you look at Settings=>General=>Carrier?
Be advised that if your iPhone had previously been hacked/modified/
jailbroken to work with other than original carrier, it may be impossible
for the original carrier to unlock it properly.

If you are using iOS 4 (or earlier) there is no Software Update in Settings. That feature was first added in iOS 5.
To update you will have to connect your iPad to iTunes on a computer (preferably the one you sync with and backup to).

Thanks! I forgot to add, I have debonded and rebonded the bluetooth in car and phone and have carried out 3 restores on the phone in my ITunes. All to no avail. I have also jsut spent £40 on a lead from Ford that has made no difference too! I went to them today to request a software upgrade on my car as I though perhaps the lack of connectivity in the car was down to the car being behind the iOS5 software but was informed there was no need for an upgrade and this problem is purely an apple problem! Is there any way around the downgrade? Or are apple gong to resolve this problem at all??
