Me too, also upgraded to IOS 5 last night and all the apps, photos, books have disappeared from the iPod Touch. I can see them in iTunes, but can't figure out how to put them back into/onto the iPod.
I tried the right-click and choosing "restore from back-up" without success, as it had just backed up from the updated iPod without all the stuff on it.
I could use a really simple explanation: how to put the stuff that I can see in iTunes on my Mac, back onto the iPod touch??
And yes, it would be nice if Apple just posted a clear, simple explanation of how to do this . . . I haven't found that yet . . .

I see some of them sorted into "collections"... this is not how I would ever sort or collect my photos.. work documents, mixed with family photos, mixed with selfies my son took with the dog? please please please tell me there is a way to get my old camera roll back. Are you saying that you had all your music safely stored in itunes and now it's all gone? You might try getting back the itunes folder that contains all your music (you haven't told us what kind of computer you're using) from a computer backup, say from a day ago. If using a mac, look in Time Machine, in the music folder for your account.

Try downloading any free app from the store (as that appears to reset something) and then re-try them - the free app can then be deleted.
If that doesn't work then you could try a reset : press and hold both the sleep and home buttons for about 10 to 15 seconds (ignore the red slider), after which the Apple logo should appear - you won't lose any content, it's the iPad equivalent of a reboot.

Thanks but have tried that - When I try to restore I get a -50 error and into a loop of taking another back up. I took a copy of the back up before the IOS upgrade and have it stored on my desk top but I cannot get Itunes to restore to that back up

Cannot transfer videos into my ipod touch after upgrading to iOS5 and iTunes 10.5! HELP!

before i upgraded into iOS5 and iTunes 10.5 i was still able to transfer videos with mp4 format.
after i upgrade, i cant transfer anymore.
I CANT TRANSFER THE SAME VIDEOS I HAVE.
I CANT VIEW VIDEOS THAT I DOWNLOADED FROM THE APPLE TRAILERS.
what went wrong?

I am encountering the same problem. And its really frustrating to see that the same videos that played earlier cant be played now. WHY?
There are some itunes forums that give the solution as :
Add the video to iTunes. Convert it into correct format using iTunes. But when i try to add, it doesn't even show the video on the list. No error message is also shown to indicate why the video is not added even to iTunes. Earlier it added but gave error when doing sync. Now i cant even Add.

You will have to format your iPad. Looks like that's the only way to reset your password.
Formatting your iPad
Turn off your iPad, turn on iTunes, hold large button down on ipad while connecting the white ipad cord to your Pc.
When the window prompts format iPad,let the button go and press format button on iTunes.

try deleting your icloud account from your phone. you can also try disabling 3G.
