Composers, Genres but no longer Audiobooks. That clasification is absent from my iTunes as well. I have downloaded an audiobook to my IPhone and it shows in iTunes when I click on "On This iPhone" in ITunes but I can't find it on the iPhone itself. What to do?

You are referring to Photo Stream. Photo Stream syncs the photos taken with your device to all of your device.
It's not a photo storage service, so photos are deleted 30 days after being added to Photo Stream. You can't access to your Photo Stream photos from http://www.icloud.com, but only from an iPhone, iPad or iPod touch (using the Photos app), Mac (using iPhoto '11 or Aperture 3 with OS X Lion or Mountain Lion) or PC (with iCloud Control Panel).
In all of these devices, you have the option of copying them to the device, so they will be kept after 30 days -

You can import your camera roll to your computer using your usb cable as explained here: http://support.apple.com/kb/HT4083.
If you're upgrading your phone, I would recommend that you backup your old phone to your computer using iTunes. Restoring an iTunes backup to your new phone will be much faster than restoring an iCloud backup, and possibly more reliable too.
To back it up to iTunes, connect it to your computer, open iTunes, click on the name of your phone in iTunes, then go to the Summary tab of your iTunes sync settings and click Back Up Now. The go to File>Devices>Transfer Purchases.
When setting up your new phone, when given the option, choose Restore from iTunes Backup and restore this backup to your new phone. It will include your camera roll and other data; restoring the backup will will also sync your apps and other iTunes media from your iTunes library to your new phone. -

I also have the app for my iphone which is still synced with my account and has my bookmarks there but I don't know how to get them onto firefox. The account i used to sync my bookmarks on my iphone app was under the email address [email protected] as is this one. I tried logging in with the first account but no pw I tried worked. I tried to get a new pw from the site but I was never sent an email to reset it so I created a new account under the same email address.
I got my contacts back by doing another restore! Relief..
But only a very few odd apps are showing up on the 3GS

When you have audiobooks on an iPad you will get an Audiobooks option under the More button at the bottom of the Music app.
Note that audiobooks are currently a one-time only download from the store, so you may want to copy it to your computer's iTunes via File > Devices > Transfer Purchases so that you can take a backup copy of it - it should copy over to the Books part of your iTunes library. -

If you have iTunes 11 on your Mac then you can enable the left-hand sidebar via option-command-S, that might make it easier to navigate.
Connect the phone to your Mac and select it on that left-hand sidebar, and on the right-hand side of the screen there should be a series of tabs which you can use to select what to sync to the phone. If it's an audiobook then it should appear on the Books tab for selecting/syncing, and films will be on the Movies tab. When you've got the audiobook on your phone you should get an Audiobooks option in the Music app (you might need to tap the '...' tab at the bottom of the Music app to see it). -

I was just at the Genius Bar in Chicago and they said, don't worry about it. It just floats out there, however, I can not recover my messages on a flash drive. I need to go back to my old computer which I don't have with me. My messages were in folders for a lawsuit. It is going to take an incredible amount of work for me to, you have no Idea. We are talking thousands of pages! I the defendent will have them during discovery so I am not so worried. However, I can not bring them to him on a Flashdrive when I meet with him without an extraordinary amount of presssure on my part. THis is not just some little email issue. The real question is what are you doing at all? This is one of the most basic iPhone functions. Read Chapter 4 of the iPhone User Guide. While you're at it, scan the rest of it.

I have a strange problem. When I put my iphone 4S into my pocket (pants or coat) and move it around, the phone makes a beep noise/tone. I can't figure out what is causing the noise. It doesn't sound like any of my regular applications. Maybe it is the lock noise but I can't tell for sure. More movement makes more beeps. Even walking with my phone in my pocket creates beeps. The IOS is 7.0.4 (11B554a). Anyone else have this crazy problem?
